Saturday plans & our menu for the week

We have our normal array of kid activities (two soccer games, art class, a sleepover friend), plus regular errands & chores. Here's my full list of plans for today:


  1. Run 3 miles
  2. Yoga? Time permitting
  3. Take Nick to art class
  4. Soccer for Sam
  5. Soccer for Nick
  6. Make hummus
  7. Go to Lucky for risotto (use $10 coupon)
  8. Make menu plan 
  9. Make Costco shopping list
  10. Produce stand
  11. Costco
  12. Figure out running training pan
  13. Library card
  14. Laundry
There you have it. It will be a glorious day if I can accomplish that, plus squeeze in some reading on my new lounge chair. ;-)

And, the menu for the week - I'm thinking of the following:

  • Saturday - steak (found two small ones in the freezer!) + grilled potatoes & salad
  • Sunday - homemade pizzas
  • Monday - latest work night, so leftovers
  • Tuesday - Pasta & meatballs
  • Wednesday - homemade taquitos
  • Thursday - Fish & pasta
  • Friday (likely just me & the boys, so something easy like soup & sandwiches)

  1. I am at a loss what to cook. We broke down and had a hotdog at Costco last night after a quick shopping trip there (was still $125 for over the counter meds but it is still cheaper than everywhere else). Maybe something on the BBQ tonight. Too hot here to cook!

    1. I bought Sam a Costco hot dog for lunch. He seriously inhaled it. Then again, he's a thin & growing boy. I'm jealous. ;-)

      It's been nice & cool here, although expected to get into the 90s this week!

  2. I have to weed through the fridge, pantry and freezer clutter again. I'm thinking meatballs and pasta sauce this week, perhaps another goulash and tacos another, but not sure what else is lurking in the freezer for meet. Steak! Lucky find.

    1. We should also do tacos. We have a ton of taco meat in the fridge. I know -the steak was a lucky find. Leftover from two separate "fancy" dinners. One was Easter, not sure when we had the other one. Perhaps near the holidays? ;-) It's old!

  3. Woo hoo! Found steaks are great!
    I am slowly but surely getting my freezer in very manageable shape. Since it is sunny and hot here we are grilling something each meal this weekend. I still have a couple of packs of unlabeled meat. I am thawing one of those overnight and I guess we will see what we are having tomorrow after I see what thaws

    1. Nice work! We've had mystery freezer meat as well as mystery casseroles at our house as well. I once, in my most epic freezer fail, thought I defrosted pureed tomatoes from the freezer. Except, they were pureed persimmons from our tree. I mixed them in with a homemade spaghetti sauce I was making. It was . . . interesting. ;-)
