Two more soccer games complete today (Nick's team won again, and Sam's team had another loss, although much closer than yesterday). I was on the soccer field & then out & about for the majority of the day. But, I did manage to get in a quick run in the morning, do all of the laundry, talk to my parents, & help the boys organize their closets.
I also made soup for dinner, to use up some questionable looking broccoli. I made this broccoli & cheese soup (similar to Panera's soup), and the only change was that I pureed the entire batch in my Vitamix before adding the cheese. It was delicious! I served it with bread & salad, to round out the meal.
The weather has cooled off perfectly here, and I'm enjoying the peace & quiet while Michael has the boys out of the house. :-)

DeleteThe soup looks delicious, and is very low-carb. My daughter can't have it because of all the dairy, but I'm going to bookmark the recipe and make it some evening when it's just me and my husband at home (and when it's cooler).

It was great! Forgot to mention that I used 2% milk instead of the half & half it called for. Slightly healthier, but mostly because it's what we had on hand. You could also reduce the cheese by probably 1/2 a cup? I'd spice it up a bit as well. It says "salt & pepper", but I found I had to add more than just a sprinkle.

I've never tried making a broccoli cheese soup. That was a produce save for sure. We are finally getting cooler weather too - glad for it!
ReplyDeleteI think I'll make this,this week.We're suppose to get some rain on Wednesday. So perfect. I'll use veggie broth instead of chicken for the veggies here!
