I made this chicken fajita recipe & it was so delicious, I thought I'd share. I followed the recipe as is, which is unusual for me. All of the peppers were from our garden!
I served it with cilantro, fresh baked tortillas, & guacamole (peppers, tomatoes & cilantro from the yard). Yum.

DeleteYummy!! We love mexican food. I use a similar recipe. I just use fresh garlic instead of powder & coriander spice - no onion powder. I've also been making mine in the instant pot, because the chicken just falls apart, it's so tender. We use that chicken for all our different mexican meals.

DeleteI'm late to this, but wanted to suggest that zucchini works well with fajitas as well, since I know you are always looking for ways to use yours up. Slice thin, and saute away, they taste great alongside the onion and peppers.
