It was a busy week, and an equally busy weekend. Prepping food over the weekend helps us stay on track between activities during the week.
I can't function without a menu plan!
- Friday - we had Thai takeout
- Saturday - barbecued chicken (M) + pasta salad with lots of garden goodies
- Sunday - In & Out style (homemade) burgers + leftover pasta salad
- Monday - chicken curry & rice
- Tuesday - beef & cauliflower taco skillet
- Wednesday - leftover barbecued chicken
- Thursday - chicken curry & rice
- Friday - Making burritos with the beef & cauliflower skillet filling
Other things happening today:
- Clean the house
- Laundry
- Make curry

- Host pool party
- Take Nick to meet up with friends
- Work out
- Carpool plan for the week
- Work schedule for the week
- Make to do list for tomorrow, as I have a crazy day

I made pumpkin waffles for breakfast and cleaned up the kitchen from that. I need to process and steam clothes for Bailey’s business. Fold laundry, make enchiladas for dinner. Make a few phone calls, and all the other stuff I normally do.

I am going to make the beef cauliflower bowl instead of taco salad one night this month. It sounds delicious!

ReplyDeleteLabor Day here was focused on everything but chores, lol. Enjoyed a 35 mile bike ride along the coast, enjoying bagel sandwiches at the beach at the halfway point, afterward came home and pretty much just read and napped the remainder of the day. Dinner was salmon, rice, and sauteed broccoli. The salmon recipe is simple and delicious - spread a nice layer of spicy brown mustard atop salmon, then pile on some panko crumbs mixed with some melted butter on top. Bake at 350 till done. So easy and delicious.
