Menu Plan Sunday

 It's another busy week, so throwing together a menu plan always helps.

  • Friday - M & I weren't very hungry, so I baked up a tray of the Costco prepped samosas, and we had that with a salad. 
  • Saturday - Dinner at a friend's house
  • Sunday - garlic noodles with beef and broccoli
  • Monday - slow cooker chicken & dumplings (me) & M will have salmon (freezer), as he's not much of a soup fan. I know, I don't understand it either ;-) 
  • Tuesday - leftover garlic noodles with beef & broccoli
  • Wednesday - taco salads (prepped meat from the freezer)
  • Thursday - any remaining leftovers
  • Friday - we are flying to Boulder to see Nick for family weekend, so likely something at my friend's house, once we land. 
What about you? Any new recipes to share? Are you transitioning over to more fall recipes? What are your favorites? Would love any slow cooker favorites!

  1. I grabbed a Sam's Club chicken yesterday so after sandwiches, I've cut some for a hot dish and will throw the bones and residual meat In the crockpot while gone today. We have extra summer for a few days, but I LL still make the broth for soup as I have cheese tortellini and spinach in the freezer that should be used up. Week two of the meal kits as well and that's my week sorted.

  2. I made a trip to Trader Joe's last week and stocked up on easy things to fix. Mandarin Chicken and Fried Rice, pot stickers, bags of frozen veggies, etc. It was good to take a break from the same old grind of HEB. I also do planned leftovers where I buy a meal out, then split it two ways. That gives me a break from cooking and ensures I have something to pack for a good lunch. (:

  3. After seeing upteen hundred, well that is exaggerating, probably 400 ppl per week in court the last couple of weeks, I have come down with Covid. Thankfully I finished up court Thursday and didn’t have any Friday, but started feeling foul in the middle of court Thursday. Doing much better and if I test negative going to work tomorrow although still very tired. This strain has really upset my stomach so it has been homemade chicken broth potato soup for me. I added leftover cabbage, spinach, and sliced green tomatoes to it bc I don’t waste food if possible. I am sure it will be very simple meals this week that I can just grab, given how weak my stomach has been. Cindy in the South

  5. I’ve seen a couple of taco salad recipes on videos this week and now see it on your menu too. I’m going to have to make is one soon.
