Menu Plan Sunday

 It's a strange week, with travel & the holidays + another mini trip still to come. Here's what we're eating this week.

  • Friday - our flight was really delayed, so I had a protein bar at the airport
  • Saturday - I made caramelized onion & goat cheese ravioli (Trader Joes) + rotisserie chicken, in an ultimate "keeping it easy" dinner
  • Sunday - Southwest Chicken skillet (using the rest of the rotisserie chicken) 
  • Monday - leftover ravioli + meatballs
  • Tuesday - leftover Southwest Chicken skillet
  • Wednesday - New Year's Eve - we will be at a party, and eating whatever is there
  • Thursday - M & I are going to a seafood restaurant, so definitely fish
  • Friday - going out to do dinner with my parents, so I'm guessing steak

  1. The ravioli sounds fantastic.
    I also love fish! I froze the leftover ham, and glazed carrots on Saturday so that I can use them to make greens soup (swamp soup) on New Years for the traditional greens, ham, black eyed pea soup with cornbread. I have baked chicken and rice for Sunday and Monday. Tuesday and Wednesday will probably be something easy and I may make the swamp soup on Wednesday evening for Thursday. Cindy in the South

  2. Using up any leftovers is the plan, but I'm doing so made new dishes like pasta sauce, curry, and bean soup. I'll send frozen portions home with my daughter so she can have a few home cooked meals for dinner on e she's so busy again.

  3. I pulled out a chicken deli roast from the freezer to thaw. I’ll use my electric knife and slice it up and we will eat on this all week long. It’s high in protein, low in fat, and perfect for our dietary lifestyle these days. Your dinners sound good. I like ravioli and need to check out the ones at Trader Joe’s.

  4. As usual I am keeping it easy this week, but I do plan on fixing myself a nice steak for NYE and some comfort food for NYD. I may also break open a bottle of moscato someone gifted me. (:
