I need to start getting adjusted to feeding three people vs four, which will be a bit of a process I think. Sam & I were the most aligned eaters, whereas M can't eat most carbs (food allergy) & Nick eats almost entirely carbs & doesn't love things mixed together. ;-) I'm mostly kidding, as Nick eats plenty of fruit & veggies, but is pickier about his protein options. Making a menu plan will be quite an adventure! My previous approach was to choose things that Sam & I would like, that could also be adapted for the other diners. Now it seems silly to optimize for just me, so who knows! I suppose some experimentation is in order.
- Friday - chicken marsala (from the freezer)
- Saturday - salad with grilled chicken
- Sunday - barbecued burgers (freezer)
- Monday - tacos (prepped meat from the freezer)
- Tuesday - spaghetti & meatballs + garlic bread
- Wednesday - leftover tacos
- Thursday - leftover spaghetti & meatballs
- Friday - pizza (cauliflower crust for M)

ReplyDeleteWe actually made spaghetti on Sunday & it was fabulous. It's Nick's favorite, so will probably be featuring prominently on the menu for the next year.
DeleteIt is hard to adjust after you have been cooking for 4 all these years. We have been empty nesters for a long time and I have just figured out how to cook for two.

DeleteCan’t go wrong with spaghetti and meatballs, can you? We had a roast chicken dinner Saturday. Last night was slow cooker chicken tortilla soup with the leftover chicken. Tonight was lasagna. Going forward we’ll have mahi mahi, leftover lasagna, tuna casserole, Swedish meatballs, Saturday night steak, baked potatoes and salad, and slow cooker pulled chicken sandwiches on homemade rolls for Sunday. Local college kids are back in session tomorrow, so our Sunday sit down dinners have been moved to Saturdays, and Sunday are serve yourself meals. This allows them to have uninterrupted study time on Sunday.

ReplyDeleteWe had spaghetti last week and it was so good with a salad. Hadn't made it in a while. I'm thinking about doing a taco soup and a cabbage soup this week so I can freeze some for later.
ReplyDeleteSoup sounds great. It's still a little too warm this week for soup, but I'm hoping it can cool down, so I can make soup for myself, if no one else. (HP)
