Home stretch before the holidays, complete with all of the typical business & additional commitments. Here's what we're having this week:
- Friday - we had spaghetti & meatballs, using a bolognese sauce that I'd prepped & put in the freezer. Once again, the freezer inventory & organization made life easier!
- Saturday - hamburgers (made with Beyond Meat) & roasted potatoes
- Sunday - fesenjan (tried a Persian recipe, which is chicken stew with walnut & pomegranate sauce), served over rice
- Monday - baked chicken & rice
- Tuesday - spaghetti & meatballs
- Wednesday - fesenjan & rice
- Thursday - something from the freezer, or any remaining leftovers
- Friday - Out to dinner
What about you? What are you making for dinner this week?
Trying to keep it simple here in the lead up to much heavier eating and bigger meals once our sons are home.

DeleteI time splurged and made a full pan of lasagna when ai took a break this afternoon. I had a meeting that's went into the evening, so thought it would work out great. Was not on my list of possible meals but now it will be at least one more plus lunches. I cooked more hamburger than needed so I'm set to season and have taco Tuesday which also will have leftovers. I'll check your new dish out. It sounds like I'd enjoy.

DeleteHow was the stew? I checked out the recipe link and it sounds really tasty and not something I have in my usual wheelhouse. I bookmarked it to try after Christmas.
ReplyDeleteI thought it was delicious. Sam & I ate quite a bit. M thought it was "different" that the traditional ones he had in his childhood (unsurprisingly). I would make it again. It makes quite a bit, so scale accordingly. I also didn't add any sugar (I used pomegranate molasses, which I ordered on Amazon). At the end, I tasted it, and added a bit more salt, and a tiny amount of sugar. You want to hit that right note of enough flavor, but not overly sweet.
DeleteIt all sounds good. Those veggie burgers were really good doctored up with seasonings. We would eat those again. It’s nice that they were free.
ReplyDeleteI agree. Sam eats the veggie burgers quite often when we go out (in place of a hamburger), and enjoys them.
DeleteAlmost nothing, in that it is literally a food fest of holiday activities the entire week. As an aside, I manage the holiday food overload by making a plan, and then visualizing what I will eat at each event ahead of time. It really helps, and so far I have not regained any of the 15 pounds I lost this year. Staying regular with my exercising and outdoor activities helps as well, both physically and emotionally.

I am trying to figure out if security at airport will let me have my three sandwiches and cut up carrots for overnight flight with long layover … did I mention I absolutely hate airport lines for food…. Atlanta airport and I have not bonded well… lol Cindy in the South
ReplyDeleteKeeping it as simple as possible as on Christmas I will be cooking up a storm. It might be here at home, or if Kurt can't get his SUV repaired in time at his place (9 hour drive, but I refuse not to spend Christmas together, cause who knows what may happen later).
