Menu Plan Monday

 Still adjusting to feeding three people vs four, but we did a great job last week of eating all of our prepped freezer food. The freezer is looking good & ready for me to stock it with some soup for my lunches. 

Here's what's on our menu this week

  • Friday - pizza (cauliflower crust + regular)
  • Saturday - tacos
  • Sunday - grilled chicken + rice
  • Monday- leftover tacos
  • Tuesday - leftover grilled chicken + rice
  • Wednesday - chicken yakisoba (one of the last prepped freezer meals)
  • Thursday - carnitas (the other last prepped freezer meals)
  • Friday - leftovers
What about you? Are you adjusting your menu as the weather changes? I'm the only one who eats soup, so I make it & freeze it for lunches, as I can't get my other dinner diners to join me. ;-)

  1. The arc of the light here in the north sound put me in full on baking mode and canning mode. I canned some salsa, and have loads of apples to tend to. They will become applesauce or canned out filling. I haven’t dec yet. I baked peanut butter cookies, zucchini bread (zucchini from the garden) banana bread for the freezer, and because I was bored on Saturday night, and the kitchen was too clean, a pumpkin marble cheesecake with shortbread crust for Sunday dessert. Meals for this week are yet to be determined. I think we will have a Sunday roast on Monday tonight, and steak stir fry tomorrow. I had planned twice baked spaghetti from leftover spaghetti and meat sauce for tonight, but one of the college boys got to the leftovers before me! (We have, and always have had a strict, “unless I have stated I am saving it for something special, like a pan of brownies to take to an event, the food in this house is to be eaten policy.”)-Meg B.

  2. Weather not changing here(still in the mid 90Fs). We won't be in the soup eating zone until Jan., Dec. at the earliest.

  3. I am dieting as I have had way too much fun! Went and paid for groceries and it was $89.00 the most I have spent since Joel died. But healthy food is just more expensive.

    1. It really is more expensive. If it's comforting, I spent close to that buying snacks, drinks, veggies for a veggie tray to feed Nick's class that's coming over to watch the debate tonight. I don't really count that as groceries, but under the "kids" budget. (HP)

  4. It all sounds delicious. I'm making chicken in the slow cooker for dinner tonight. I made chili over the weekend and am freezing what's left for lunches.

  5. We are not adjusting quite yet but will be in a few weeks. TheHub is pretty dogmatic about eating soup only if the weather is cooler. We had rare warm weather soup Sunday night only because the day was overcast and gloomy. I guess he thought the weather inside felt fallish though I blame the a/c.

    1. I love your husband's approach. My husband grew up only eating soup when he was sick, so he absolutely will not eat it, as it reminds him of the flu & such. I love soup, so it always makes me bummed not to have it on the menu more often. (HP)

  6. I am trying to get more freezer meals done as I am beginning to get projects together for gifts for Christmas. The weather here has definitely gotten cooler, and I will be pulling out sweaters very soon.
