My parents are in town, so meals look a bit different, with other folks prepping, and us serving six instead of the usual four.
Here's what's on the menu for the week.
- Friday - we had chicken fajitas, with chips & guacamole
- Saturday - I made chicken shawarma, which was delicious
- Sunday - M made kebabs & rice, & we had cupcakes for dessert.
- Monday - chicken enchiladas
- Tuesday - I'll be at a team dinner, but I think my dad is making lasagna
- Wednesday - blackened chicken & pasta
- Thursday - leftovers
- Friday - TBD, but it will be just my mom, myself & the kids. We may do frozen pizza

The most real cooking I'll likely do is to make chickpeas masala for lunch today and send back. We likely will eat down fridge and freezer.

We are RV’ing at the beach this week (Malibu), so the menu is what I call ‘trailer’ food, meaning minimal prep work. Our trailer galley is petite, as is the fridge, so I rely heavily on convenience.
ReplyDeleteMon- Leftovers from Easter: Honeybaked Ham (a once a year splurge), scalloped potatoes, sautéed green beans, corn bread
Tue- Fish & Chips at a great place that we can walk to from our RV park
Wed- Home Chef Thai chicken soup, naan, bagged salad
Thur- Trader Joe’s Kung Pao Chicken, rice, bagged salad
Fri- Dinner in town, at Marmalade Cafe, where we’ll share an entree.
Sat- Home Chef Chile Verde Chicken Soup, corn muffins, bagged salad
Sun- Tortillini w/EVOO & Parm cheese, green salad
I love the convenience of above, but I am always happy after to get back ti my kitchen to cook ‘real’ food.
