Freezer challenge - part 1

 Oh, the exciting lives we lead. . . when you were just a young 20ish year old, fun loving & fancy free, did you ever think a fun project you would give yourself would be inventorying your freezer & then figuring out to do with all of the odds & ends?! ;-) 

I went through & made a digital list of both our inside & outside freezer. I then realized that M bought spanakopita at Costco again, even though last time we bought it, we ended up giving it away, because he can't eat carbs, & Sam & I didn't like it. Nick would also not be a fan. So, I gave away all of it (with the reminder to please never buy it again) & a bonus pack of frozen corn. Oddly, I really dislike frozen corn & have no good reason for this. I'll eat fresh corn all day long. But, nope on the frozen corn. My parents bought it for a recipe & didn't end up using it. So, some random items already out of the freezer.

Next up is a bag of zucchini from the garden last year, which is my project for this week. I'm going to make this shredded zucchini casserole as a side dish for tonight, which has the bonus of using up the last of the cottage cheese as well as some shredded cheese that we need to get through. I'll skip the bread crumbs. 

We have an absolutely embarrassing amount of overly ripe bananas, breads/buns of all kinds (mostly because we really don't eat much of it), a lot of pot stickers, so many chicken wings, two bags of chicken bones from a rotisserie that need to be made into broth, & other exciting items.

  1. I was just thinking I should tackle the umpteen containers of zucchini in the freezer and I believe I have all those ingredients. My freezers are actually quite low. Two lower speed months back to back helped bei g the volume down.

    1. I thought it needed a bit more seasoning, but overall core recipe was good. I was also thinking that adding leftovers to a skillet with another egg could be a good filling for a breakfast burrito (I didn't use the breadcrumb topping). - HP

    2. I made zucchini relish with my frozen, shredded zucchini. Granted, what was once in the freezer in freezer bags is now in the pantry in canning jars, so not sure what I saved. But, we do like the relish.
      I am not cleaning my freezers so much as I am cooking from them. Tonight it’s chicken lo mein with errant bscb. Sunday will be a roast chicken that was in my way when I was looking for something else. Tomorrow I will make country fried steaks with cube steaks I had no idea I had. Honestly, this approach to meal planning is sort of fun because I still am not at the point where I care what I eat, much less cook for others.

  3. I am slowly making my way through what I have before I replenish it and its a slog. Some of it I just don't want to eat, or cook, but my frugal self cannot bear to throw it away!

    1. I'm with you. We have soooo much bread, and I'd love to just toss it, given how infrequently we use it (or give it away, but not sure who wants someone else's frozen bread), but I'll try to give it a shot to use some of them. -HP

  4. You have a special challenge in that your garden appears to be a very prolific producer of vegetables, so yeah you even if it presents some usage challenges!

    Funnily, I use frozen corn often enough to ensure I always have some in my freezer, along with frozen peas. We never eat them plain as a side dish, rather I have a lot of slow cooker recipes that include frozen corn. Vegetarian chili comes to mind, and also several variations of slow cooker tortilla soup. Just as a thought.

    1. We didn't have much gardening success last year, but we can grow herbs, green onions & peppers year round. Neither DH & I really like frozen corn, even in taco soup & the like. Who knows why. We skip it if the recipe calls for it, and double up on other preferred recipes. - HP

  5. for all those bread tid-bits....stuffing! kids/teenagers will typically eat stuffing...though not great for those no-carb-ers haha

  6. I enjoy a good freezer clean out. I try to stay on top of it every week, but its easy to let it slide too.

  7. I will be tackling the chest freezer this coming month. I am not looking forward to that at all.
