Here's what's on the menu for the next few days:
- Sunday (yesterday) - spaghetti & meatballs (freezer). We didn't have our usual after-ski pizza, as we didn't go due to M's illness.
- Monday - Hearty turkey stew with vegetables. (M is not a soup fan, but he's currently sick, so I'm taking advantage).
- Tuesday - Chicken enchiladas (freezer)
- Wednesday - Leftovers
- Thursday - M is out of town. I'll have leftovers again.
- Friday - Penne in almond chicken sauce
- Saturday - Leftovers
- Sunday - Homemade pizza
I made rice krispie treats for the kids this afternoon (so gourmet! ;-)), & I'm hoping to make a biscotti & another batch of the crazy good chocolate chip muffins for the freezer. I'm secretly hoping to find time to make bagels, but. . . we'll see. :-)

ReplyDeleteI still have to do my meal plan. The only thing for sure at this point is chicken fajitas since the Daughter bought me some baby portabellas yesterday at the store.
Ha! It's not like a regular pasta sauce, where you add a bunch to the noodles. Or, at least we don't eat it that way. One batch probably makes 16 individual pasta sauce servings at our house.
DeleteOh, & I cut back on the EVOO, parm, & use milk in place of heavy cream. It's definitely not a light recipe, though.
This is something I'd like to get into, but am not sure of the benefits to a single person. I find that the simple task of making rice sometimes has me eating rice for days afterwards. Not that that is in itself a bad thing, but it does mean I get sick of rice very quickly. Perhaps the trick to buying/cooking for a single is just to buy less? I still haven't quite got the hang of either. Work in progress, I guess. These recipes do sound delicious, though...
ReplyDeleteWhat about making a few recipes/week, & then freezing half? If you follow the plan for a few weeks, you'll be able to mix & match between frozen items, & won't have to eat too much rice. ;-) That's what I did when I was single (well, when I was organized, anyway). half the time I bought easy to prepare entrees from the store and/or worked late (they fed us) or went out.
DeleteThe problem there is freezer space, or, rather, lack of. My fridge is small yet efficient, but it also means less space for storage. Also doesn't help that I have a roommate at the moment, so space in the fridge is at a premium. Ah well. It's definitely doable, and the suggestion is great. I think it's just going to have to wait until the current roommate situation is over (June) before making greater plans. :)
