Here's what we've had so far, & what we're making the rest of the week.
Monday (12/31)- M made the most amazing Persian dinner for New Year's Eve. I ate myself silly. :-)
Tuesday (1/1) - Chicken, red grape, & pesto pizza after skiing.
Wednesday (1/2)- Three cheese chicken penne florentine - from the freezer.
Thursday (1/3) - Ravioli & chicken (freezer) with fresh tomatoes & parmesan
Friday (1/4) - Butternut squash soup (freezer) + goat cheese crostini
Saturday (1/5) - We're having a guest over for dinner, so for an appetizer we'll have fresh mozzarella caprese. For dinner I'm making a chicken pesto pasta with homemade bread. For dessert, I might make cookies, as our guest has a sweet tooth. :-)
Sunday (1/6) - Pizza (after skiing). I may make a meatball/mozzarella pizza, if I get inspired.
Monday (1/7) - Chili & biscuits
Tuesday (1/8) - M will be out of town. I'll have lentil soup (freezer) with homemade bread.
Wednesday (1/9) - M's still out of town. I'll be having lentil soup (freezer) & either biscuits or homemade bread.
Thursday (1/10) - It's shocking, but I'm planning on having soup again. With some sort of bread. I live on the edge. ;-)
Friday (1/11) - Spaghetti & meatballs
Saturday (1/12) - Salmon & rice
Sunday (1/13) - Homemade pizza.

Tonight homemade pizza with toppings from leftovers in the fridge (sausage/ham/cheese and green peppers) and salad. I really don't meal plan as find I spend more on groceries then. We only decide one day ahead in case something needs defrosted. You sound like a very good cook!
ReplyDeleteOooh, that sounds yummy. I'm an okay cook, but good at a few recipes! I'm trying to broaden my repertoire a little bit in 2013. I have one picky eater that makes things tricky.
DeleteWe use our crockpot quite a bit. This is a great site, http://crockpot365.blogspot.com/2011/02/easy-peanut-butter-chicken-slow-cooker.html, for crockpot meals and a link to the one I have tried, so delicious! I serve it over cilatro lime rice. I need to try more of her recipes.

DeletePesto pizza sounds delicious! We are still eating holiday ham in sandwiches and casseroles.
ReplyDeleteOh, it's amazing. I buy the pesto at Costco (didn't make enough with my basil this year) & it's also really easy. The grapes on the pizza catch people off guard, but they are fantastic. We are low brow, & eat it on a Boboli pizza crust (my skiers are hungry the second they walk in the door), so it's quick & easy.
DeleteMeatball/mozz pizza sounds delicious! Yum. I don't blame you for having soup... there are some soups I could just have forever, especially the hearthier kind. For a second there, I read "menu plan 2013" and thought, wow, a whole year of meals! I could definitely never do that!
ReplyDeleteHa, no! I'm impressed with myself if I can do more than a week at a time. And, mostly I do that to make sure I know when M is traveling, & downwardly adjust our grocery purchases to accomodate. Can't wait to try the pizza - it just kind of came to me.

It is soup and pizza weather, oh yes it is.
Oh, chicken & dumplings sound fabulous. My mom made that a lot growing up & I haven't had it in years. Time to look for a recipe, I think!

My finnicky husband doesn't like soup (the horror!!!), so I take full advantage when he's out of town.
