Saturday Happenings

The boys had a school soccer game yesterday, which ended in a tie. They both played quite a bit, and for much of the game were both playing defense. They were fun to watch, and I got a few photos, which is always a treat. (Teen boys are not so much for allowing mom to take their pictures. :-))

After the game, I dropped Nick off at tennis lessons, and came home to make dinner & a salad. M had torn apart the espresso machine, in an attempt to fix it. The espresso machine is 16 years old, and according to the tracker on it, it has made 20k+ cups of espresso. It's been on its last leg for over a year, and M ordered a few parts & is attempting to fix it himself, with help from YouTube videos. Parts were all over the kitchen, and the espresso has so many colored wires, it looked like a bomb. Let's see how the repairs go. A replacement is several thousand dollars, so it's definitely worth attempting to repair, not to mention keeping the old one out of a landfill. A repair is not for the faint of heart!

We had an easy dinner of ravioli (which, Sam had as an appetizer, because he couldn't wait for Nick to return from tennis) & baked panko chicken. The chicken had been in the freezer for a while, so I was happy to get it out of there & free up some space.

The boys wrapped up the evening with cookies (dough balls in the freezer, for just such an occasion). They have voracious appetites most days!

It's shaping up to be a pretty mellow weekend, which I'm grateful for. Here's what's on the agenda:

  • Meet a neighbor for a walk. She lives right behind me, and we've chatted a few times, and have tried to get together on & off for over a year. It's never worked out, so I'm happy I'll have a chance to get to know her a bit better.
  • Produce stand. I need just a few items for the week ahead (broccoli, cauliflower, peppers & cabbage)
  • Shopping list. This is mostly complete
  • Costco. M will brave the crowds, as he has more patience for this task than I do.
  • Make coleslaw to go with dinner
  • Grill chicken (M). He's making barbecued chicken, at my request.
  • Make granola bars. Sam ate all of the delicious no bake peanut butter chocolate bars, so I'll make another snack to have on hand.
  • Laundry (always)
  • Pick up the house
  • Take Nick to/from a friend's house. It might be bikeable, so perhaps he can bike there, & I can pick him up in the evening.
  • I'm also hoping to book flights for my mom's 70th birthday. My sister & I are taking her to Hawaii this summer. I bought gift cards for the flights on Costco (they are 10% off, and I get a 3% rebate), so just waiting for the gift card numbers to come through, so I can complete the purchase.
What are you up to this weekend? Hope you are all staying healthy & having a relaxing & productive weekend!

  1. I laugh when you post about the guys appetites! I remember all too well having seemingly continuous eating occasions when ours were teens. It takes a lot to fuel active folks who are also growing (at an alarming rate) at the same time. I finally learned to make double batches of all snack foods.

    1. It really does take a lot to fuel them! And, I swear that their taste & preferences also change quite a bit. But, e're keeping everyone fed, which is really the most you can ask for. :-)

  2. Sounds like a lovely weekend, and hopefully your weather there is as pleasant as it is here! BTW- a quick calculation show $2000/20,000 is about 10 cents a cup- that is not a bad cost at all for a fab cup of coffee, even on top of whatever your coffee grounds cost!

Over here we are working to stay away from people in advance of a procedure I’m having on Tuesday to remove a large benign cyst in my leg. I should be able to return to running after a ten year hiatus once the cyst is removed, which seems to wonderful to be true, so fingers crossed!

So our plans are to hike, bike, and kayak, enjoy good takeout, and enjoy some outdoor live music tonight at our sailing club.

    1. Our espresso machine as a really tremendous purchase (made when Sam as an infant, and caffeine was our life blood!) M was able to fix it, for no, so we're pretty jazzed.

Good luck with your procedure & fingers crossed for running in your future!

Your plans always sound like so much fun, and right up my alley.

  3. The teen appetite! I'm about to go get flax seed soaking for mock eggs and then do something with a bananas. I'm trying to find like a baked oatmeal banana bar. We decided to go out for dinner. I should be more productive but mentally dealing with a couple tough work issues, so giving myself some space and reading.

    1. When my brain is spinning over those tough work issues, I find that getting in a workout of some kind really distracts me, particularly if it's outdoor. I know your weather is iffier this time of year, but that may help as ell.

Dinner out sounds so nice - enjoy!

  4. Boys are never ending food. I only had girls but they had boyfriends and I just remember how much they could eat!

    1. My sister had a boyfriend in high school who could eat an entire pan of my mom's "buttery pan rolls". They were delicious, and we always had to make two batches on evenings when he would be joining.

  5. I usually meal prep and clean, but today I went to Beyond Van Gogh. Tomorrow I'll blog about this.

  6. I used to eat like that as a teen... The good ole days 😁

Do you have a recipe for that panko chicken? I was defrosting chicken for the week and that sounds just about perfect.

Costco/airline for Hawaii: I may use points when we go out there next but in case we have to buy out of pocket, what airline do you get gift cards for? I'm wondering if I need to expand my airline horizons.

    1. We pretty much exclusively fly Alaska, as all of our flights are west coast. I've also bought the gift cards for Southwest, though, as we are going to Park City in February, and they fly direct from San Jose.

The panko chicken came already breaded (but not cooked) from Costco. It was an easy dinner meal, but no recipe to share, unfortunately.
