Apparently, we have a lot of chicken on the menu this week. ;-) It's another super busy week ahead!
- Friday - orange chicken & fried rice. I cheat & use the Trader Joes veggie fried rice, and add eggs & additional edamame, to make it bulkier
- Saturday - chicken fajitas
- Sunday - grilled chicken & rice + champagne & cookies for Mother's Day
- Monday - leftover fajitas
- Tuesday - leftover grilled chicken & rice
- Wednesday - Asian beef/rice dish (freezer)
- Thursday - either at senior night for soccer club, or in Sacramento with Nick for tennis playoffs
- Friday - TBD, based on whether we're coming home from Sacramento

Weird that I spent a fortune on groceries and have no idea of what to cook. I think tonight is just going to be chili in the crockpot with rice.
ReplyDeleteHa, yes. I can relate. I try hard to buy "ingredients", but that means sometimes I look at the fridge & just stare into the abyss & wonder what to make. (HP)

DeleteI am TIRED of meal planning. It was beautiful here in the PNW the past several days, so our meals were homemade fish, chips and coleslaw, a late tuna pasta salad on Friday, baked salmon on Saturday, and a Mother's Day Sunday roast dinner of chicken, carrots, baked stuffing, gravy, salad and a homemade Key Lime pie. Of course there were mimosas all around too. I have no idea what to fix going forward. I think last night's leftovers might find themselves in a chicken pot pie. But beyond that, I am stumped.
ReplyDeleteI feel this. There are weeks that I'm like, why do I plan? I never know who will be home, how late practice will go, if M is fasting... the list goes on! Sam is really living his best senior about to graduate life, and is frequently with his girlfriend. Planning for the unknown is frustrating, and I'm hoping to move to an easier plan in the upcoming months. Your Mother's Day sounds fabulous. Key lime pie & mimosas!!! (HP)
