Healthy eating

 I've been really working on healthy eating, because I know it has such an impact on my energy, not to mention weight & overall health. It's not easy some days, and grabbing easy snacks can be tempting. We stocked up on fast & healthy options over the weekend, and that's definitely helping.

What I'm eating lately:

  • Sourdough toast with natural peanut butter + a banana
  • A salad (bagged mix) with a sprinkle of feta cheese + 2 diced boiled eggs 
  • Avocado toast. I like to mash my avocado with some lime juice, spread over sourdough bread & top with a little feta + tomatoes
  • Lots of fruit as a snack: cherries, strawberries, & melon. We tend to have a lot of cut fruit ready & available for a grab & go option
  • Sourdough toast (it's a theme, I love sourdough bread) + fresh mozzarella & tomatoes, sprinkled with salt & pepper
  • Protein bars. Barebells are most certainly not the cheapest option, but they taste like an actual treat. If you ever find these on sale, they are worth it (IMO). Trader Joes sells them.
  • Dinner leftovers
I need to make more hummus, because that is delicious to add as an option with veggies, or on a salad.

And, we are also enjoying all of the produce from our garden (a small sample), but the very clear winners are the tomatoes. Tomatoes on everything!

I warned M that those jalapenos are *spicy*, but he didn't believe me & cut up too much for his salad. He had some regrets. ;-)

    1. We are lucky, in that we can get a lot to grow here. Now, keeping it away from the critters is a bigger challenge for sure. Luckily, they don't like the citrus. - HP

  3. Yeah I love tomato and cheese sandwiches on sourdough or just a tomato sandwich. I always keep a fresh watermelon in the fridge all summer and eat it every day until Sept. I usually have grapes or blackberries, occasionally cherries also. Okra and summer squash is a standard also with Vidalia onions. Cindy in the South

    1. I miss living in the northwest, where blackberries grow as a weed. They are one of my favorites! I might be having a tomato & cheese sandwich, because that sounds delicious - HP

  4. Beautiful looking produce. Mine is minimal but the raspberries are coming and that is nice. Son gets credit for retraining them to produce again but I'm diligently getting out there to pick as ripe. I have hopes for my cucumbers. Homemade hummus us so delicious. My daughter's both like to just roast chickpeas and then toss them in anything they eat.

    1. I grew some beautiful cucumbers this year, but we can't keep them away from whatever critters get into our garden box (that we have heavily fortified to keep them out). Roast chickpeas is a great idea. Maybe I will try that this weekend. - HP

  5. Probably yogurt with granola and a bit of honey for breakfast, lunch would be some crackers and cheese, snacks are something I fall down on I go for the salt of chips, pretzels, and popcorn.
    Love that you are already getting produce from your garden.

    1. That all sounds delicious. Cheese & crackers are one of my favorites. I try to have salad for lunch most days, as it boosts my veggie intake for the day. - HP

  6. Beautiful garden produce! My favorite snacks are a light string cheese or protein yogurt. Boiled eggs (with a sprinkle of everything bagel seasoning) are good too, but they tend to go quickly.

    1. I love string cheese, and while I"m not a huge boiled egg fan, I'm discovering they go well in a salad. I'm not yet at the phase where I'll just grab one for snacking, but can definitely include them in other things. - HP

  7. The produce is lovely and the counter is very pretty too! Not much by way of our garden yet. The deer have destroyed my snap peas. I only planted three poles
    of beans and they’re not looking so great. We should have corn, though, and loads of pumpkins. The currants look great too. But that’s it.
