I didn't do much cooking last week, so you can see a few carryovers from our previous menu.
- Friday: DH had the last of the chicken satay, & I had a bowl of popcorn. It was a rough week, with being sick!
- Saturday: beef tacos (I had mine over a salad)
- Sunday: garlic noodles with beef & broccoli (didn't get made last week)
- Monday: carnitas (from the freezer) over salad
- Tuesday: leftover tacos
- Wednesday: orange chicken + fried rice
- Thursday:lemon pepper chicken (the lemons on our tree are ready to be picked!) - also didn't get made last week
- Friday: I'm off to visit Sam, so Nick & M will be on their own. I'm guessing they will have pizza, if Nick is even around at all.
I also need to menu plan for next week, when we will be having a houseful!

Thursday night, a kid grilled steaks while I heated fries in the air fryer. There wasn’t a vegetable in sight! Friday DH and a kid went out for a late lunch and called the house on the way home for requests. I was the only one home, so I had enchiladas verde and no cooking for two days! The problem with takeout is the temperature, but it was a nice treat! Last night was salmon with LDS potatoes and salad. I used a sweet Thai glaze on the salmon, something a kid and I picked up on a whim at Costco. It was a success, so I guess that counts as a new recipe.
ReplyDeleteTonight a kid requested beef stroganoff. I try to always honor requests if possible because I like the input. I will be making lasagna, roast chicken, and a beef stir fry in the upcoming week. I also had a request for a copycat Nothing Bundt cake.
Your meals already sound so delicious. The salmon & Bundt cakes in particular! (HP)
DeleteI planted some seeds from a lemon and grew actually 4 seedlings. Kept 2 and so wish they were producing lemons. But even if they don't the plants are beautiful. Just thinking it would be nice to have my own lemons to make lemon chicken.

The lemon trees really are beautiful! I love the blossoms. We are lucky in that citrus fruit grows very well here. My neighbor's orange tree is also currently dropping oranges over our fence! I need to get out & pick them, so they don't end up in our pool. (HP)
DeleteI have been pretty uninspired in the kitchen lately, since we have been eating soup and more soup.
ReplyDeleteI can most certainly relate. I've had a few good weeks, but when I'm sick, I crave high fat/salt food, which is rarely a good idea. (HP)
DeleteWe like orange chicken here too. We like to get the frozen variety from Trader Joe’s freezer section. It’s as good as Panda Express, but only costs $4.95.
ReplyDeleteThat's what we have as well! I actually prefer the Costco version, but they don't always carry it. The quality of the chicken is slightly better, I think. But, we will be having the Trader Joe's version on the menu, because that's what's in the freezer. It's one of Sam's favorite meals, and he also loves Panda Express. The founder of Panda went to his college, so they have a large one on campus. He asked for Panda gift cards for his birthday! ;-) (HP)
