Menu Plan Sunday

 The schedules are heating up recently, with Nick working a few nights a week at a restaurant, me teaching a class one night a week, and this is Nick's spring break, so he may go skiing with friends. All that to say that this is a general menu plan, and things will almost certainly change. 

  • Friday - we had spaghetti & meatballs + garlic bread
  • Saturday - garlic beef & broccoli + pot stickers
  • Sunday - M is grilling burgers
  • Monday - creamy Dijon chicken
  • Tuesday - leftover beef & broccoli
  • Wednesday - leftover chicken
  • Thursday - I have a snack earlier in the evening & then fast. I don't like to eat after my class. Everyone else will have leftovers. 
  • Friday - TBD, but likely something easy, as Nick is working. Perhaps grilled fish & salads

  1. I think you must make very large batches. My son has been working out a lot and what I think will be leftovers, he's devouring as snacks. It might be that he's eating here more as his work has been more remote so I haven't perhaps witnessed. We took a several day pause on pizza and pasta of any sort so both may be back this week. Not sure but should spend some thinking time planning.

    1. Good question. For the beef & broccoli, I used 2x the amount of ground beef called for (so, I used a pound) & then doubled the sauce so it wouldn't be dry. I probably used a little less than the called for spaghetti, but double the broccoli. Since M doesn't really eat pasta, that way we had a healthier meal with less carbs, more protein & more veggies. I often double, or customize a bit to have more protein & veggies where possible. - HP

  2. I had tuna fish sandwiches on Friday. Coleslaw, baked potatoes , baked carrots ( I cannot eat raw carrots) and a lettuce salad with homemade dressing on Saturday. I made a big pot of dried pinto beans so likely bean flour tacos with all the fixings several days, wedge salad with a side of mushrooms, and a tomato and cheese sandwich. or tomato cracker salad will round out the meals.     4. Tomato cracker salad is an old Deep South Appalachian recipe, or at least it is in north Alabama, and Southern Living has published a fancy version. My country version is simply chopped up tomatoes, with salt, generous pepper, crackers loosely crumbled, and a good quality mayonnaise. Cindy in the South

  3. You always have such an interesting menu for the week. Mine is more a mixture of old favs and I really need to add some new ideas to the plan.

  4. A flexible meal plan is needed all the time here. I plan, then it falls apart, but we never go hungry so it works for us.
