Trying to get into a bit of a rhythm again, and meal planning definitely helps with that.
Here's what we're eating this week.
- Friday - Chicken & orzo (chicken broth + rotisserie chicken from the freezer)
- Saturday - creamy Dijon chicken
- Sunday - Korean beef rice bowls
- Monday - leftover chicken skillet
- Tuesday - grilled chicken & rice
- Wednesday - leftover Dijon chicken
- Thursday - leftover beef bowls
- Friday - leftover grilled chicken & rice
Lots of chicken again this week! I need to stock up on some fish, so we can rotate that through.

Turnip green soup which has turnip greens, cabbage, chicken, little bit of tomatoes and carrots. Also, pinto bean tacos from the Prudent Homemaker website recipes. I made a pot from dried beans. I also eat the filling from pumpkin pie if I think I haven’t eaten enough of orange vegetables. That is my story and I am sticking to it… lol. Cindy in the South

DeleteIt all sounds delicious. We are having lentil loaf Tonight. I need to put some beans on to soak overnight too, so we can have beans one day this week. It’s good chili weather here too.

I felt good using the rotisserie chicken & some broth this week, although the dish turned out to be pretty boring. Definitely won't be going into the regular rotation. - HP
