Menu Plan Monday

We're trying something new this week, as the other diners in my house are getting bored with leftovers. My plan for 10+ years has been to cook on weekends (Friday, Saturday & Sunday), & make enough for leftovers for the week, with one fill in meal. I hate change and am a little worried about the timing of making everything during the week. But, we will give it a try for a few weeks, & see how things go.

We have a green salad with each meal, I just don't post it.

  • Friday - we went out, to an outdoor restaurant we've been interested in trying. IMO, it was overpriced, for the food/experience. 
  • Saturday - steak & caprese salad
  • Sunday - barbecued chicken & roasted squash
  • Monday - spaghetti & meatballs (Nick cooking)
  • Tuesday - tacos/taco salads
  • Wednesday - steak & caprese salad (we'll prep the steak "fresh", so I suppose it's technically not a leftover ;-) 
  • Thursday - taquitos (for 3 diners), salmon for M
  • Friday - Gyozos and baked chicken

  1. Your menu sounds good. I’ve been wanting Taquitos lately too. I’m not a fan of change either. B has been wanting us to eat later so she isn’t hungry before bedtime, which I’ve been doing but it makes washing dishes even later and I don’t like going to bed on a full stomach. We are going to have to change it up by about an hour to satisfy both of us.

    1. Taquitos are one of Sam's favorite foods, and he requests them regularly. :-) He also asks for a later dinner time, and M requests an earlier one. My diners are definitely not in sync here!

    1. Next week will certainly be full of adventure, as we have a soccer tournament all weekend, so no time to prepare. And, another very busy work week ahead.

  3. So far I have planned a chicken enchilada casserole with salsa verde for tonight. (Have to cook the chicken breasts at some point today.) That's it. That's all I've planned. With the start of the school year, my meal planning has had to become very flexible, with changes happening daily, maybe several times a day. I'd love to have a plan and stick with it, though.

    1. I made salsa verde over the weekend, with tomatillos & jalapenos from the garden. I didn't have enough ripe tomatillos, so it didn't quite work out, but we used it instead as a marinade for chicken. It was fantastic. How is your recipe for the chicken enchilada casserole? Is there a link you could share?

  4. I know I probably over glamorize life with a pol, but I would think your home cooked meals poolside would be a nicer experience than a lot of restaurants, especially now. I am trying to classify eating out as more for the experience, so I too would be disanointed if the food and the place were not up to value.

    1. There are usually insects (bees, mosquitoes), if you have food by the pool, but otherwise, having a drink out there is definitely one of my highlights. I also just love sitting outside after lunch & soaking up the sun for a few minutes. We don't use the actual pool as often as I'd like, but we love, love, love having it.

  5. We had hard rain here while we were gone to moms and the air is clear isn't that wonderful now that summer if over? I mean the excessive heat and smoke came in the beginning of June and just now broke. Okay sarcasm...

  6. Leftovers a couple or three days and hopefully some Eggplant Parma, providing the repair guy gets here.

  7. Steak and caprese salad sound like just the thing for a dinner later this week! Thanks for sharing, as always :) I'm glad you mentioned that you have a green salad with every meal, I struggle so much with veggie sides that it helps to hear this sort of thing.

  8. All of your items sound delicious. Obviously, the cake as a highlight. ;-) We love Mexican food, and eat it a lot around here.
