I'm trying to get back into the swing of things, with meal planning & working through our (extensive) freezer supplies. Here's what's on the menu for the week. Apparently, it's a very Mexican themed week on our side.
- Friday - baked chicken with ravioli
- Saturday - barbecued chicken & coleslaw, with the last of the ski weekend bagels for the hungry teens
- Sunday - chicken fajitas (seasoned meat from my freezer batch cooking), with all of the fixings (sour cream, cheese, tomatoes, tortilla chips, guac)
- Monday - homemade taquitos (freezer)
- Tuesday - barbecued chicken + stuffed potatoes
- Wednesday - fajitas, take 2
- Thursday - meatball soup & bread
- Friday - wings & gyozas
I'm hoping to ask Nick to make French bread on Wednesday evening, to accompany our Thursday dinner. If that doesn't pan out, I'll figure out something else to go with the soup.
I'm happy to report that we've made a lot of freezer progress, and have had some creative lunches as well. That always feels good. What about you? What's on your menu this week?
I may make some bead this week as well-have soup on the menu and thought sandwiches on homemade bread, even if the soup is form a carton, might be delicious. I'm supposed to be making a pork loin, but forgot to take out of the freezer so it is really frozen so likely that will need to be tomorrow so already doing some shifting of my menu.

ReplyDeleteWe go through phases, based on what's in the freezer. :-) But yes, chicken is largely my preferred protein.
DeleteYour menu sounds good. I ate food that was given to me such as pears, a random sausage and biscuit, a yogurt and I don’t really like yogurt. I am cooking the free carrots, along with a can of sweet potatoes and a baking potato. I was given a corn dog also and although I don’t like those, I will probably eat it this week because I don’t want to waste food.Cindy in the Soith

DeleteYum...for me, I make enough of something to eat most of the week. So, for breakfast, I have breakfast burritos (eggs, spinach, black beans and cheese), lunch is a hearty vegetable soup (carrots, cauliflower, celery, garbanzo beans, tomatoes, turnip greens) and dinner is chicken thighs, cilantro lime cauliflower rice and green beans. Throw in some avocado, kumato tomatoes and blueberries in the mix for snacks. That about covers me.

DeleteI came here for ideas for the week since I made the panko chicken for dinner thanks to your posts from the weekend! :) I've made a little progress starting to build up a new freezer stash but my ideas all feel stale and unappealing. I think we need a chicken pot pie!

DeleteWe have been focusing on our freezer all month! I'm shocked at all the good food that we found in there. Tonight we had some minestrone soup that I had made back in April 2021! Still just as good though :)
