We're back to menu planning & enjoying having a full kitchen again, complete with spices & seasoning! We cooked most of our meals while skiing, but it's challenging to make meals with just a few ingredients - particularly when you have picky eaters/those with food sensitivities.
- Friday - spaghetti & meatballs + garlic bread, after we got home from the airport
- Saturday - Grilled chicken & rice
- Sunday - sesame chicken broccoli bowls
- Monday - spaghetti & meatballs
- Tuesday - leftover grilled chicken & rice
- Wednesday - leftover sesame chicken broccoli bowls
- Thursday - finish off all remaining leftovers, or tacos (freezer)
- Friday - gyozas & wings

Lunch, tuna salad with butternut squash soup. Dinner, chicken stir fry (broccoli, zucchini, mushrooms) over cauliflower rice.

ReplyDelete*sigh* I'm tired of cooking. Tired of eating too. I could forage for the next week or so and be perfectly happy, but the household would not. We had a slow cooked pork tenderloin with carrots and potatoes on Saturday, roast beef with broccoli and green bean casserole on Sunday. Today will probably see the leftover roast beef made into a cottage pie, but even that feels onerous, and really doesn't appeal to me. If it were up to me, the next couple of nights would see me snacking on cheese, crackers and wine for dinner, while sitting on the couch, alternating between binge watching "Breaking Bad," "The Tudors" and "Spaceforce." Ah well, back to the kitchen for me...
