I'm feeling pretty scattered coming off of a very intense work week. As always, having a menu plan is one of those small things I can control that helps reduce week day stress.
- Friday - cheeseburger salad (a fancy way of saying grilled burgers from the freezer, served over salads)
- Saturday - one pan chicken fajita rice
- Sunday - egg roll in a bowl
- Monday - leftover chicken fajita rice
- Tuesday - leftover egg roll in a bowl
- Wednesday - potentially leftovers - whatever is available
- Thursday - picking up Nick at the airport for winter break, so likely a sheet pan bake
- Friday - chicken parmesan (freezer clean out item)

I thawed a big brick of ham slices so several meals with that are part of my plan. My son's birthday is next weekend but daughter is away, so I e night we'll go out for dinner. I guess it is mid December by the end of the week for college breaks to start.
