We flew in last night, so I'm slowly trying to put the pieces back together this morning & plan for our week ahead. I have today & tomorrow off, but am going to put in a few hours just to catch up. I'll work Thursday & Friday.
I dashed off a quick menu plan this morning, so I could make a shopping list for today.
Here's what's on the menu for the week:
Tuesday (NYE) - Tacos. The boys choice. :-)
Wednesday (1/1) - This amazing rice pilaf recipe, with chicken added.
Thursday (1/2) - Breaded tilapia for the adults, & chicken for the kiddos. With pasta & veggies on the side.
Friday (1/3) - stuffed peppers. I need to find a good recipe, but have the basics in mind.
Saturday (1/4) - leftovers
Sunday (1/5) - homemade pizza.
