Menu Plan Monday

Planning our weekly menus reduces stress on weeknights & ensures that we don't eat out - keeping us healthier & saving money!

I tend to do all/most of the cooking on weekends, to minimize time spent in the kitchen after work.

Here's what's on the menu this week:

  • Monday - Grilled burgers (reheated)+ grilled peppers stuffed with goat cheese
  • Tuesday - Homemade meatball pizza (really, thinly sliced burgers instead of meatballs) with peppers, tomatoes, & basil from the garden. (Leftovers - it was amazing!)
  • Wednesday - Chicken & pesto pasta
  • Thursday - Tacos with homemade guacamole
  • Friday - Clean out the fridge day
  • Saturday - homemade pizza
  • Sunday - Chicken tacos

    1. Me too - I stalk other blogs to look for good ideas. ;-)

  2. It sounds so good. It will be about another month before our garden starts producing a lot of produce and I'm really looking forward to it.

    1. We used to get a handful of vegetables (per year) when we were in Washington, so this is a huge change for us! We're loving it. I'm still trying to figure out how many of each type of plant we need. We planted plenty of tomatoes, too much basil (although, it's just one mutant plant) & not nearly enough strawberries. I'll be more prepared by next year!
