I don't have any in office days, which is always a treat! Prepping the menu helps me remember to use up pantry & freezer items, and also keeps me sane on busy days. Here's what's on our menu this week.
- Friday - the last of the beef kebabs
- Saturday - picadillo
- Sunday - chicken & rice
- Monday - leftover picadillo
- Tuesday - leftover chicken & rice
- Wednesday - remaining leftovers
- Thursday - chicken sausage & white bean skillet
- Friday - leftover chicken sausage & white bean skillet

My son is working a lot of late afternoons into evening abd then as geading into Memorial Day weekend, I'm going simple and repeatable. I won't even bother to make dinner today as it's just me. Another cold snap so thinking a pot of chicken wild rice soup might be good with sone homemade bread. He closes on his condo later and not sure again with holiday weekend and that, when he'll be home and I've no ambition to cook if no one but me eating.

DeleteI do not have any more in office days because I had submitted my resignation and Friday was my last day! I will be opening my own practice up in June though but will, hopefully, have a bit more control over my time since I will be self employed. Your food sounds great! I went to Aldi and I will be eating blackberries, cucumbers, spinach, coleslaw, tomatoes, apples, and avocado with various proteins I already have on hand. I see sandwiches, tacos, tuna fish, baked chicken, coleslaw, and salads in my future this week! Cindy in the South
