Menu Plan Monday

We had a great, fun, & tiring weekend. Lots of long walks, games with the kiddos, and fooling around at the beach.

We also spent too much. We save our household item shopping (cleaning supplies, etc) for trips to Oregon, as they don't have a sales tax. My favorite wine, which Costco only carries in the summer, was also available, so I bought a case. Yikes! We ended up leaving early on Thursday to try and avoid the crowds on the road (it didn't work), so we grabbed dinner on the road. And, M's all time favorite food is Copper River salmon, so we picked up a package on Saturday - $30. That fed three adults 2 dinners, and there's a bit left.

Anyway, *really* need to get the spending back under control, and plan an inexpensive rest of the week.

Here's what's on the menu plan for the rest of the week:
  • Tuesday - homemade spaghetti & meatballs for me & the kids (from the freezer) & leftover salmon for M.
  • Wednesday - Oven baked chicken risotto
  • Thursday - Chicken pasta casserole (freezer)
  • Friday - Leftovers
  • Saturday - Tacos
  • Sunday - Homemade pizza

We got home late last night, so I spent today unpacking, doing laundry, baking bread, making popcorn for snacks, and making homemade protein bars. Oh, & I also went to the gym. Now I'm exhausted! :-)
