It's a partial menu plan around here, as we are out of town for a very fun long weekend! My BFF has her 50th birthday in November, so we are meeting up in Las Vegas with my sister, and a few other friends & going to a concert & getting up to general shenanigans.
- Friday - grilled burgers (from the freezer)
- Saturday - grilled chicken & rice
- Sunday - fall sheet pan dinner (new to us) - update, we made this last night & loved it. Highly recommend! We subbed butternut squash in for the sweet potatoes. Delicious & super easy.
- Monday - leftover rice + chicken curry from the freezer
- Tuesday - grilled chicken salads
- Wednesday - I want to try & recreate this roasted veggie salad we had recently. We shall see how I do. We will top it with some sort of protein & I'll probably go off of this recipe.
- Thursday - We are eating at a seafood restaurant
- Friday - my favorite steak house!

I have lot of easy things planned to fix for this week - salads with protein, ravioli with jarred sauce, stuffed bell pepper, crab cakes. It looks labor intensive, but really isn't. I started posting my menus again and am struggling with striking a balance between wanting to cook and wanting to order take out. I do miss eating grilled things!

I made a fall sheet pan of roasted carrots, potatoes, onions, a pot of dried lima beans, Baba ghanoush ( I love eggplant and tahini), and have coleslaw mix, mustard greens growing in my yard, and chicken in freezer for the end of the week if I run out of prepared food. ReplyDeleteThat sounds delicious. I also love baba ghanoush, but a slight preference for hummus. My favorite is a spicy hummus (TJs makes one, I've tried to recreate at home & never been able to). It's delicious. - Hawaii Planner

ReplyDeleteI've got Chala masala ( sort of) in the crockpot for today. I know I'll make a big pot of soup this week too, plus a birthday meal out for my daughter. Leftovers will do one night too.
