An abbreviated plan, as we leave mid week.
- Friday - we shared a cauliflower crust pizza + chicken (freezer) for extra protein
- Saturday - out at a party, where they served Mediterranean catering
- Sunday - high protein chicken tzatziki bowls (using rotisserie chicken) - new recipe
- Monday - lemon dill chicken cakes
- Tuesday - leftover chicken bowls
- Wednesday - leftover chicken cakes

I managed to hit my step goal for the month, thanks to an 8 mile hike yesterday. I knew what I needed to do when I added the numbers, and had planned time for a hike. I also did a lot of my packing for our trip, but still a few pieces to put together. And, somehow fitting everything into our bags. We went to a really lovely party with friends, and it was nice to catch up with a few people we know.
As for today, I again need to be very productive:
- Long hike with M, although I'm not options to bring my big pack, as I'm in the midst of packing it. I will probably try to weight my day pack & use that.
- Video call with my sister + BFF to catch up + do some Greece planning
- More packing
- Laundry
- Get a pedicure ahead of the trip. M laughed a bit at this, but my nails are too long at the moment, and I am hoping there will be at least a few days where I can where sandals - it is summer after all. The weather mostly looks quite similar to a bay area winter day in the current forecast, but I'm optimistic we will get more sun.

The trip is coming soon. While I want to read the adventure I hope you just fully enjoy every moment. I'm practicing Greece packing and trying to decide if I can get by on carryon at least on the way there and save $75.
ReplyDeleteI'm all about the carry-on! I've done 12 day trips with just a carry-on, but with a laundry stop mid-trip. I wear lounge clothes (tights, sneakers (which I take off on the flight & replace with slippers), running socks, a sports bra, long-sleeved dry fit top & a bonus pullover in my backpack in case I get cold) on my flight. This trip, I'm going to try & have these sneakers do double duty, because I usually also bring running shoes. I have my toiletries down to a very reasonable sized amount, and bring outfits that coordinate & go together. I also bring 2-3 workout outfits, depending on the trip. I roll everything! LMK if you have questions, because I consider myself a semi-pro carry-on traveler! - HP
DeleteYour menu sounds good. I like following a Mediterranean diet. Both chicken recipes look great.
ReplyDeleteI've had something similar to the tzatziki bowl before at a Mediterranean restaurant (it's near my gym, and I've been tempted a couple of times before!), so I'm hoping I can replicate it. - HP
DeleteThe tzatziki bowls sound good - I love the ease of using rotisserie chicken. I think the most exciting this I am eating this week is some cacio e pepe ravioli, and a taco meat stuffed baked potato. I have planned 2 lunches out and that jazzes me...its the little things.
ReplyDeleteI'm with you on the rotisserie chicken - it's been such a help the past year or so. Easy peasy, goes into lots of different dishes. I love cacio e pepe! Yum. And, two lunches out to look forward to!
