It's not a very impressive menu planning week, but even putting the loosest plan together is very helpful for me, as I try to organize my life.
- Friday - we had lemon chicken from the freezer
- Saturday - beef kebabs & rice
- Sunday - garlic noodles with beef & broccoli
- Monday - leftover lemon chicken & rice
- Tuesday - kebabs
- Wednesday - leftover garlic noodles with beef & broccoli
- Thursday - wrap up any leftovers, or spaghetti & meatballs
- Friday - DH will eat salmon, Nick & I will grab something at the airport lounge ahead of our flight to Colorado
What about you? What's on your menu for the week ahead?
Have fun in Colorado! Cindy in the South
ReplyDeleteMy daughter is coming later to do her laundry, visit, so making a large vegetable curry. It's soft enough she can eat ( mush the veg a bit more on her plate). I've been in the mood for Chinese inspired flavors so will lo mein and stir fry vegetables, plus maybe a cottage pie. Those are the only thoughtful ideas I have. All will make leftovers for lunch or maybe enough for a leftover night.
ReplyDeleteWell, DH was discharged on Friday, and had no appetite, so we had pineapple crisp with whipped cream. Last night was a corned beef, cabbage and carrots slow cooked in Guinness, (one of his favorite meals), and we all ate heartily. Tonight is pasta with meat sauce or meatballs, depending on how I feel. Going forward in no particular order, I think we will have salmon with a sweet Thai glaze, chicken and rice bake (request from a kid), tuna casserole sans peas, grilled steaks, and an apple cabbage soup with homemade rolls.
ReplyDeleteI am just happy we are all home and healthy.
