Menu Plan Sunday

 We definitely need a menu plan to stay on track, with my work schedule, the boys activities, & M's interview schedule. Nick is the only one not working this week (the restaurant he works at is closed for some updates), as M's prepping for interviews is more than a full time work load.

Here's what's we're eating this week:

  • Friday - grilled burgers & watermelon
  • Saturday - one pan chicken fajita rice
  • Sunday - spaghetti & meatballs
  • Monday - leftover burgers
  • Tuesday - leftover chicken fajita rice
  • Wednesday - leftover spaghetti & meatballs
  • Thursday - chicken + caprese salad
  • Friday - any leftovers, or TBD

  1. Today's just picking at leftovers. I probably will make a chicken, rice, and broccoli hotdish, tuna cakes for a change, homemade pizza perhaps,but haven't thought much yet. My son has a couple work nights so I'll look towards things he can reheat, though as he lived as an independent adult for 15 years, perfectly capable of making food and cooks occasionally for both of us. July has to be a bent tightening month so no steaks on my menu and no take out.

    1. I also try to make food that the boys can reheat for easy meals, not because they aren't capable of making it on their own, but because it's just nice to help them out. Plus, honestly it's a lot tidier than having them make the entire meal from scratch. ;-) - HP

  3. Ugh. TOO MUCH eating out around here. Thursday and Saturday we had some emergencies…not health related, requiring us to drop everything and respond. (One kid had to beach boat when winds came up suddenly and needed dry clothes delivered so they could figure out how to get the boat back on the truck trailer without going back in the water to steer it in the boat ramp. That water was waaay too choppy, and I am glad they beached it rather than try to go the extra distance to the ramp. Saturday one of the hives had a swarm requiring an emergency trip for a specific bee keeping supply.) We ate out those days. Friday we grilled steaks and brats, and I baked a peanut butter sheet cake for dessert. Going forward we have a request for slow cooked pork and sauerkraut (I am not in the mood) cold seafood pasta salad, lasagna, burritos (both beef and bean, as Daughter is a vegetarian now, doncha’ know), seafood chowder and homemade calzones. (Really just homemade bread dough filled with pepperoni and cheese, or cheese only and baked.) There is leftover cake, homemade brownies and homemade peanut butter cookies for desserts throughout the week.

    1. So glad the kid was safe with the choppy water. After reading the Texas stories, I'm paranoid. Sometimes, the eating out just happens. I try, whenever possible, to make eating out as an experience, not a fill in for laziness or not wanting to cook or plan well, but also...life happens. You cook a lot, and do a great job keeping everyone fed, so the occasional off week will happen. As always, definitely want to eat at your house, although I'd never be able to resist all of the treats. Your homemade calzones sound fantastic!

  4. I made too many baked beans so I think baked beans, potato salad I made, and watermelon will be on the menu til I finish them off… lol. I have fresh tomatoes from the farmer’s market for sandwiches also. I need to finish off the grapes at lunch and will probably have a pbj sandwich to go with the grapes. Cindy in the South

  6. Sounds like a great menu. I am going to go easy this week with salad with chicken tonight, tacos, nachos, ham and cheese tortilla wraps, and pizza. It is too hot to really put much thought into cooking and I am incredibly busy with some other things. Hope you have a great week.

    1. Luckily, it's not too hot here, but on hot weeks, you really can't find me in the kitchen. I press the easy button as often as possible to avoid being in a hot kitchen, or further heating the house. - HP
