Menu Plan Sunday

 It's definitely going to be a busy week, with Nick's soccer banquet, me shadowing a class I'll be teaching in April, a soccer mom get together, and Nick & I don't get back from Colorado until tomorrow!

Having a menu plan is a small step towards keeping me (mostly) sane during a busy week. When we are gone, M typically has fish & salad. He's a man of routine. ;-) 

  • Friday - lounge food for me + Nick, followed by pizza at our friend's house. Mahi mahi for M
  • Saturday - at a friend's house
  • Sunday - at a friend's house
  • Monday - Nick & I will eat at the lounge ahead of our flight home
  • Tuesday - chicken satay + rice, after I finish my class
  • Wednesday -  soccer mom get together. Fajita chicken (from the freezer for M + Nick)
  • Thursday - leftover chicken satay
  • Friday - all of us will be eating at the soccer banquet

  1. I needed a major stock up so spent a lot yesterday, but now can just top off and buy loss leaders. I splurged on three petite sirloin steaks. I don't often get a craving for one, but the price was not horrific for what they were and definitely less than going out for one. Those will be tonight with salad and baked potatoes. I haven't thought much farther ahead- maybe curry for Thursday as my daughter gets her dog picked up, homemade pizza another, pasta of some sort.

  2. Right now I feel over my head in the on-going garage project. But actually, there is light at the end of the tunnel. Dinners will be easy. When I am not eating out, I will be re-heating a cheesy chicken chili I froze in January. Present me appreciates the hard work of past me. (: Safe travels to you!

I plan on coleslaw, grapes, finishing off the blackberries, sandwiches for breakfast and lunch, wedge salads with homemade blue cheese dressing, tomato sandwiches on sourdough bread, baked potatoes and baked carrots. I am not sure about meat, maybe shrimp or tuna fish sandwich. Cindy in the South

  5. So far I am sticking to cleaning out the fridge freezer. I hope to manage to get loads cleared out over the next couple of weeks, perhaps even longer. I also need to use up those meals I prepared before hand so perhaps I can stretch my challenge for another week.

  6. Friday was a fancy salmon dinner to welcome Daughter home for spring break. I also made a chocolate cake with peanut butter frosting and homemade ice cream. Saturday was a roast chicken, Sunday cottage pie with the leftovers because I couldn’t be bothered to cook. Going forward we will have pasta, fish and chips, salmon again (daughter is now a pescatarian, doncha’ know) beef (or vegetarian) burritos, and perhaps a night out. Kids want a repeat of our Christmas dinner out, and DH is all for it , though he doesn’t want to join us. I am not sure I want to face that bill again, for all the food and service was great and we had a ball!
