In addition to the dinners I have listed, I also need to find the time to make a few soups for the freezer, as they make great easy lunches.
- Friday - grilled chicken & rice
- Saturday - out to eat
- Sunday - leftover chicken & rice
- Monday - chicken shawarma
- Tuesday - Korean beef
- Wednesday - leftover chicken shawarma
- Thursday - leftover Korean beef
- Friday - TBD, but likely gyozos & spring rolls, or something similar from the freezer
What about you? What's on your menu this week? I need to find a way to use a bunch of fresh herbs (doesn't have to be together), so if anyone has recommendations that use a lot of any of the following (mint, rosemary, thyme, tarragon), please let me know. I'm going to cut back a bunch next week for friends/neighbors, dry a bunch, and would also like to make a few recipes with the fresh ingredients.
I like those herbs but haven't cooked with them. Maybe rosemary and thyme in meatloaf perhaps.
ReplyDeleteI think I'll take the lazy approach & dry everything &/or give it away. Using them fresh is more work than keeping them in the pantry for cooking. We use rosemary with steak (fresh), but haven't had that in a while. (HP)
DeleteI am sure I will make avocado toast for breakfast once this week because I have an avocado, roast beef and cheese sandwiches for lunch, grapes and strawberries for snacks, orange juice to go with my breakfast, cheese sandwiches, coleslaw, probably green beans or green peas to go with cheese toast and coleslaw, use up last of beans so probably a taco also. Boiled shrimp and a key lime pie also. I took a rain check from my youngest son and will meet him next week for lunch. I hurt my back cleaning by lifting stuff that was too heavy so I need to rest today. lol. Cindy in the South

DeleteAll of that sounds delish to me - especially the chicken schwarma! Have you ever made compound butter with herbs? I imagine it would good on so many things! I love to buy the fancy butter at HEB because of laziness...

DeleteIf I had mint, I would make mint jelly. I love the way it looks in the jars, as well as how it tastes in crackers. (I learned not to plant mint, because it takes I’ve. It made weeding the beds fun though.) I don’t use tarragon, but love rosemary and thyme. I dry it to use in every day cooking. I tie the sprigs together, and hang them upside down to dry, then crumble them and put them in jars. I use rosemary in my homemade breadsticks.
ReplyDeleteMeals…ugh. I was away one night last week, and they ate poorly. I had three meals out while I was away, two of which were amazing Indian meals. It took some time to get back into the swing of things, but as good as the meals were, I was tired of eating out.. Friday we had fish, coleslaw and mushy peas I found over the border. (Wish I had bought a case!) Saturday it was only 4 of us, and a kid came home from work with Chipotle bowls of all things, for all of us, because he knew I was tired. I disliked it immensely, ate half, and had to toss the rest. Lesson learned. Sunday was supposed to be a roast beef dinner but DH asked for spaghetti and meat sauce instead. Since I was in the yard all day, that worked out. Kid who helped me requested slow cooked pork and sauerkraut tonight, served over mashed potatoes. As you know, I always try to honor requests. Tomorrow will be the roast beef. Lentils and rice for Wednesday, teriyaki chicken on Thursday, salmon on Friday which brings me back to Saturday.
I also made some poppyseed muffins, and have had a request for homemade peanut butter eggs. I also have several gallon bags of blackberries in the freezer that need to be converted to something before this year’s harvest! I was thinking quick bread, and a cobbler. Or, if I can’t get my act together I will make a batch of jam.
As always, I'm planning on dropping by for all of the fabulous cooking!! DH made a special request for chicken shawarma, so I made sure to add that to the list this week. (HP)

Ina Garten's herbed baked eggs uses rosemary and thyme, although just a little. She has also has a tarragon chicken salad and rosemary roasted potatoes. I second the compound butter option for when you grill steak or chicken.
