This is mostly for myself, as it will be useful to have a list of favorites to look back on, particularly on those meal plan days when I'm uninspired. I also thought a list might help others get some inspiration.
We don't do a lot of pasta, as M can't have much, and it requires more separate meal prep than I'm usually willing to do. And, not everything has a recipe, because... well, some things are just done by memory by myself or M.
Anyway, with that, here is a list of our favorite dinners!
- Spaghetti & meatballs with garlic bread. We use the cheater Italian frozen meatballs from Costco, which are fabulous.
- Ground beef tacos. Simple, with the taco seasoning. Serve with tortillas, cheese, tomatoes, salsa & sour cream.
- Beef kebabs & Persian rice, with grilled tomatoes & tzatziki sauce (M makes his own).
- Grilled chicken & Persian rice. M makes his own marinade.
- Sheet pan fajitas
- Chicken shawarma
- Chicken parmesan
- Chicken stir fry
- Slow cooker chicken and dumplings
- Slow cooker chicken satay
- Easy lemon pepper chicken
- One pot lemon pepper chicken and orzo
- Garlic noodles with beef and broccoli
- Creamy Dijon chicken
- Chicken marsala
- Peanut noodles with chicken
- Easy sesame chicken
- Easy chicken vegetable curry
- One pot chicken and rice
- Chicken sausage white bean skillet
- Creamy garlic chicken
- Egg roll in a bowl
- One pan chicken fajita rice
- Korean beef rice bowls
- Warm taco slaw
- Garlic butter chicken
- Southwest chicken skillet
- Beef & tomato rice bowl
Apparently, we eat a lot of chicken! ;-) We do eat fish, steak & other things, but rarely use a recipe. I'm also a big fan of the BudgetBytes website, clearly.

I don’t think I have ever had Persian rice but I love rice! I don’t generally use recipes either lol. Tomato cracker salad is a go to bc I eat a lot
ReplyDeleteof tomatoes. It is simply chopped salted tomatoes with broken up crackers, pepper, and a good mayo. Many folks add cheese crumbled and cut up onion and peppers. I also make swamp soup but I think that is an acquired taste because lots of folks hate greens. It is simply your favorite greens such as mustard greens, collards, turnip greens etc, can of rotel
tomatoes or fresh if you prefer and also add jalapeƱo if using fresh tomatoes, your favorite beans, cooked carrots, chicken broth, I add a package of Knorr vegetable
mix, onion of your choice chopped up with whatever meat you want or it can be meatless. Typically it is made with ham or chicken. Put in crockpot and cook until ready or it can be cooked on top of stove in a big pot. I know, my directions are a dab of this or that… lol. Mississippi pot roast is also pretty good. I also make a pot roast in crock pot with just the pot roast, beef broth bullion, or you could use water, chopped up potatoes, tomatoes, onions, carrots cooked all day until meat is tender.Just make sure to add liquid occasionally so it doesn’t get dry. I don't know that I have tried either of the first two, but have definitely made pot roast before & liked it. M was less into it, so it was a one time trial on our menu. Your soup recipe sounds delicious! - HP

DeleteThank you for the list of recipes! I attempt to share recipes on my blog as well, but generally have to default to cookbook photos as most of what I've been cooking lately is from Cook's Country, which puts everything behind a paywall, grrrr!

ReplyDeleteI didn't know that Costco has frozen meatballs, PiC recently picked up their fridge section chicken meatballs. That's not what you're talking about, is it?
I don't cook much or often but did just make a triple batch of this braised pork with eggs (we use canned quail eggs), 2/3 of it will be frozen and we'll eat 1/3 of it this week: https://www.hungryhuy.com/wprm_print/thit-kho-vietnamese-braised-pork-with-eggs. Makes about 6 meals for the 4 of us, with plenty for seconds over rice.
