We're planning a few fun dinners (they will likely shift around), as Sam will be home for spring break. Hurrah!
Here's what's on the menu this week:
- Friday - I made spaghetti & meatballs (freezer) + garlic bread
- Saturday - orange chicken & cauliflower rice
- Sunday - M is grilling burgers
- Monday - grilled chicken & Persian rice
- Tuesday - leftover burgers
- Wednesday - leftover grilled chicken & rice
- Thursday - tacos
- Friday - Sam's choice

Persian rice sounds intriguing! I made very simple menus and may or not may not follow them...I have been on an anti-cooking streak lately. I do know that there will be a taco salad in my future, tho!
ReplyDeleteI have a huge storage of dried beans and peas so I made black eyed peas with tomatoes, onions, and carrots cook in chicken bullion and garlic. I currently have in the oven eleven long carrots salted and wrapped in foil, and a potato also. I made coleslaw bc Publix had it on sale. Greens grapes, cherry tomatoes (two for one), strawberries, will be the other fruits and vegetables. I will probably pop a frozen bbq chicken thigh in oven if I run out of the above and a tuna fish sandwich on Friday with pickles. Lunches are roast beef and cheese or ham and cheese sandwiches this week and breakfast will probably be a cheese and tomato sandwich or maybe an eggs sandwich. I have nuts and seeds to snack on in the car if I get hungry when driving they comprising roasted and salted pecans, sunflower seeds or pumpkin seeds. I have Publix chocolate chip cookies for dessert… lol. Cindy in the South
ReplyDeleteFriday night we actually had pizza! I had been cooking lots of heavy meals all week, including our St. Patrick Day corned beef, cabbage and Guinness cake, so two kids offered to pick up pizza on their way home! I am not a fan of pizza, generally, but they got a veggie pizza for me. but It was very nice to not have to cook. I didn’t even set a table!
ReplyDeleteLast night was slow cooker pot roast . There are loads of leftovers, so tonight I will make a beef pot pie. Monday I am planning baked salmon. Tuesday I am heading over the border for the night with friends, so they are on their own!
Going forward in no particular order we will have fish and chips, spaghetti and meatballs, lentils and rice, burritos and a roast chicken dinner.

Leftover chicken pot pie soup tonight is all I've thought through. I'm back from a day+ trip, didn't get enough sleep, and that soup was a welcome site. I'll make some biscuits or we'll just have with crackers.
ReplyDeleteI just wrote a list of prepared freezer meals that we can eat this week if we want to, with just the addition of the carb we need to add, on the fridge list. There are at least 3 good meals we can pick from which is great, one is courtesy of a favorite relative I'm so grateful for. I have been turning to takeout more often than I used to, but I've stopped feeling guilty about it. It's the unfortunate trade we have to make to compensate for my lack of energy and time, but people have to be fed. Anyway, I've been trying really hard to prioritize cooking at least for stress relief and I doubled recipes so I have chili and some home recipes we can pull out.
ReplyDeleteI'm just catching up on your past few months and realizing I've fallen WAY behind on your posts. Surely it can't have been a year since you left your last job? And yet I think it has been! I caught up on some of your recruiter experiences and it jives with how much I hated being a hiring manager working through a recruiter. It was supposed to be better but to me, it was just another failure point in a difficult process. That was years ago but I still remember it.
I thought your longterm plan was always for you to retire around now, did that change because the layoff happened sooner than you planned or because M was recently laid off? Or primarily because of health insurance? Health insurance is definitely my primary concern when retirement planning and unfortunately my confidence in any existing healthcare system is even more shaky now with this administration in place.
Won't it be lovely to have a full house once again. Your menu sounds great.

Sounds good! I have orange chicken and cauliflower rice in my freezer, so we may have that for dinner one night this week.
