Menu Plan Sunday

 We have leftovers in the fridge & need to ensure we use everything up before M & I head out on a weekend getaway!

  • Friday - we had fantastic grilled steak, caprese salad & roasted brussel sprouts
  • Saturday - leftover barbecued chicken + macaroni & potato salad
  • Sunday - chicken fajitas (freezer)
  • Monday - we didn't end up making the Southwest chicken skillet last week, so it's on the menu again
  • Tuesday - leftover fajitas
  • Wednesday - leftover Southwest Chicken skillet
  • Thursday - finish up any remaining leftovers
  • Friday - on vacation/not home

  1. The girls will be here for supper so not sure. I made a big curry Friday so there's enough of that for the vegan eater. Maybe I'll do a penne pasta if some sort with loads of vegetables and meatballs in the side. Both like that. I have a very large pork loin and some newly purchased Memphis BBQ rib to try.

    1. Have either of you ever made any paneer dishes? Any hints?Daughter is a vegetarian (but not vegan) now, and I am trying to find ideas which suit us all, but working with paneer intimidates me.

    2. Meg - I haven't tried cooking with paneer, so don't have any good advice. I'm also a little intimidated. Maybe try it on a night when you have an easy backup plan at the ready? You're a great cook, so I'm sure it will be fine. Report back if you try something! - HP

  2. Use up mode, chicken and broccoli or brussel sprouts from freezer, tuna fish sandwiches, a tomato based soup dish with spinach, green onions I grew, and pasta in it, pinto bean taco with pintos, salsa, sour cream, spinach, tomatoes, cheese, onions, and
    finally a bacon, spinach , tomato sandwiches because I have spinach on hand but not lettuce. If I need anything extra I will just do butter peas from freezer with cheese toast and perhaps mustard greens from my little pots if the greens are ready.

  3. Tonight we will have leftover chicken enchilada casserole. It is very filling so just some orange slices on the side. We have chicken, Salmon, shrimp and turkey chili in the freezer plus pasta, canned tuna, vegs,, etc. so will make up the rest of the week as we go.

  5. Beefy Baked Beans, Hawaiian Chicken, Minestrone Soup, and Bean and Cheese Enchiladas so far that I know. Your menu sounds delicious. Safe travels this weekend.

  6. Of course since the boys were home I cooked way too much. We are working through leftovers from the visit, plus some leftovers from before that I froze.
