Menu Plan Monday

Another week is complete. Can't believe it's Monday already! Here's what we will be eating this week:


  • Friday - steak & salad
  • Saturday - Sam & I had a late lunch after soccer, Nick had a taco quesadilla, & Michael had salmon
  • Sunday - chicken curry & rice
  • Monday -  balsamic chicken over pasta
  • Tuesday - chicken curry
  • Wednesday - balsamic chicken over pasta
  • Thursday -  maybe spaghetti & meatballs
  • Friday - samosas & chicken
That's it at our house. I'm hoping to work down some of our freezer items. The curry I made yesterday was the best I've made. Wish I could figure out what I did differently - I followed the same recipe, but it was more delicious than usual!

  1. Yum... as a single person, I usually make one or two dishes, and eat that for the week. So for this week, ground turkey over cauliflower rice (though I doctor up the turkey and rice), chicken salad for lunch, and egg bake, avocado for breakfast.

  2. Yum, samosas! I'll be RIGHT over!!! I was once at physical therapy when a client brought in a huge plate of fresh, homemade samosas to thank the people in the office. My physical therapist laughed at me; she said my whole face lit up when the man announced what he had, and she sent me home with some. They were delicious!

    We're having a tofu/broccoli/cashew/red pepper dish with an Asian-inspired sauce over rice tonight. Something with cauliflower will come next; I have a large one to use up! :)

    1. I also love samosas! It's one of my 15 y.o.'s favorites, so it happens with some frequency.

  3. You know I haven't thought about what we are going to eat today let alone all week. I know I need to make room for a turkey in my freezer so I had better go out and look!

  4. I'm happy today for a rotisserie chicken. Both the fog and I feel lousy so husband can have that. Your meals sound terrific again.

  5. Boiled eggs in morning , a turkey, cheese and lettuce sandwich for lunch with potatoes chips, and a large mixed lettuce organic salad with julienne beets. I bought a container of the lettuce and think it will take me all week to eat it… lol. I will probably make a soup to go with it. I will probably eat peanut butter crackers for a snack.     1. I love, love roasted/pickled beets. I'm the only one in my family, sadly, so I never eat them unless I'm out. Yum!

  6. A wonderful menu once again. We had Red Thai Curried Chicken over rice last night. A bit spicy (would cut some out next time) for me but Harvey really liked it. Tonight the leftover roast beef is being made into stroganoff.
