Menu Plan Monday

Our "menu" was really hit or miss last week, thanks to me getting home much later than expected on Sunday, and not having time to menu plan/prep. I definitely want to avoid that this week. 


  • Friday - leftover birthday pizza & salad (in a nod to health)
  • Saturday - ham & bean soup + bread
  • Sunday - tacos
  • Monday - stuffed peppers (freezer)
  • Tuesday - roasted chicken & carrots
  • Wednesday - leftovers
  • Thursday - pecan crusted chicken over salads
  • Friday - TBD, but likely wings & gyozas, or something similar
What about you? What's on the menu for the week? What's your go to "meal", when you don't have time to meal plan & prep?

  1. I just found lurking spinach and a zucchini so already changing up my menu to do a pasta bake as opposed to whatever was on the menu. I'm thinking I'll need to resort to frozen pizza one night!

    1. I was proud of myself for using freezer shredded zucchini & applesauce this weekend (separate kinds of muffins for each), and need to make my way through more freezer items!

  2. This week my menu includes, salads, chicken, fish, pasta a la vodka and celery roots (plus carrots and potato) cooked in olive oil as a side dish. My go to meal is pasta or pizza when I do not have time to plan and make anything. My pizza dough requires a minimum of half an hour in a warm spot but, still it is an easy and quick choice.

    1. Oooh, pasta ala vodka - I'm in! We keep breaded chicken in the freezer, and that plus pasta makes a quick, kid friendly dinner. We also have pizza for the same reason (frozen, though).

  3. Sunday roast yesterday, so slow cooker beef stew with the leftovers tonight. In a little bit, DD and I will get to work making some rolls. Tomorrow will be baked chicken of some sort. Beyond that, no idea. Thursday and Friday are busy with appointments, so I will take those days as they come.

  4. Supper is soup; generally I make a big soup every Sunday and we eat it Monday and Tuesday, but we have two friends joining us for supper so I have no idea what I'll do for Tuesday.
    Wednesday - something easy from the fridge like egg burritos.
    Thursday - I also don't know. Wow I need to get on this!
    Friday - homemade mini pizzas for my daughter's birthday party! And cake, of course.

    1. Soup would absolutely be my go to, but my husband doesn't like it, and my youngest doesn't like food combined together. Which, frankly rules out of ton of stuff! I'm envious that you are feeding soup eaters.
      Also, love the idea of mini pizzas for your daughter's birthday party.

  5. Some weeks plans don't happen or go up in a cloud of smoke. I do better with some sort of plan to keep food waste to a minimum.
