Menu plan for the week

I'm a bit behind this week, but still need to get a menu plan together. Soccer is back in full swing, and the boys are heading back to school, so things are getting a bit more hectic.

Here's what's on the menu for the week. As usual, we try to cook enough for leftovers with each meal.

  • Saturday - we had carnitas nachos
  • Sunday - M made kebabs & rice
  • Monday - A bit of a grab bag. Taco quesadillas for Nick, leftover carnitas for Sam, chicken ranch casserole for the adults
  • Tuesday - leftover kebabs & rice
  • Wednesday - any remaining leftovers. If none, spaghetti & meatballs
  • Thursday - grilled chicken & veggies
  • Friday - pizza for the kids, steak for the adults

  1. I will probably stick pretty closely to my meal plan this week. Dealing with Mom is like wrangling cats, so I did a lot of advance cooking and prepping so nightly meals should be a snap. If it doesn't appeal to anyones taste__too bad!

    1. Our rule is, if you don't like it, you're in charge of fixing something else for yourself. In most cases, that means everyone eats what I make. ;-)

  2. I had intended to make a big pot of rice for heating up with eggs, cheese, beans etc. for lunches for the week. I always love your menus.

    1. That sounds great! I miss easy rice based & pasta meals. It's hard with my husband doing Keto & the kids needing so many carbs. I've definitely gotten the hang of it, but it's more work for sure.

  3. I always, dreaded my kids going back to school as the year ramped up, I was just so busy, teaching and running kids to lessons.
