Menu Plan Monday

 

Menu plans always help me feel more in control of the week ahead, particularly when we have crazy schedules (as expected this week!)

  • Friday - just me & the boys for dinner, so we had a bit of this & that
  • Saturday - beef with barley soup (using leftover pot roast, from the freezer) & homemade bread
  • Sunday - chicken & dumplings
  • Monday - spaghetti bolognese (over soy noodles for M, pasta for the rest of us)
  • Tuesday - various leftover soup
  • Wednesday - tomato soup & grilled cheese sandwiches
  • Thursday - balsamic chicken (failed skillet recipe, leftovers from the freezer) over pasta
  • Friday - Remaining leftovers. If not, wings & samosas (freezer food)

  1. We had a sirloin tip roast, with mashed potatoes and roasted carrots for late lunch/early dinner yesterday to celebrate Halloween. At some point this week, I will use the leftover roast, and leftover mashed potatoes for a cottage pie. (I'll need to make a few more potatoes.) We never did eat the lobster ravioli, so that will be served at some time this week. Beyond that, I have no ideas. I have one of two boxes of smoked salmon in the pantry which I picked up over the summer. A kid said wasn't the best for bagels, (not Costco quality, apparently) so a salmon-cheddar chowder might appear tonight or tomorrow.

  2. I'm inviting myself for Friday night dinner, because I love samosas :)

    I made a chicken pie for tonight, tomorrow I'm trying chicken butternut casserole. We'll eat leftovers the next 2 nights, then Italian sausage, potato wedges (I'm trying in my new pot) and baked beans or salad.

  4. I made spaghetti and meatballs and there's a lot leftover. I've got a hectic week so hoping to cook 2-3 times, and leftovers other nights. We like cottage pie too- very homie.

  5. I am doing Sam’s good challenge. I opened a can of beans ( 59 cents a while back) a can of tomatoes paste ( also 59 cents, threw in garlic, dried onion, etc, and leftover crushed tomatoes from last week and a leftover tamale, and made a soup. Works for me for dinner at night for the week. I will eat a salad or greens on the side. Cindy in the South
