It has been a struggle to come up with a menu for the week! I wish I had a good reason for that, but it's just how things have unfolded. I haven't felt like cooking much, I've also been busy, we've had lots going on for Nick, etc. We've made plenty of creative freezer meals, which I suppose is a win.
- Friday - we debated getting delivery, to go along with an at home date night. In the end, I found a single serving of chicken shawarma for M (freezer) & I had cheese, crackers & an apple.
- Saturday - delivery, using Door Dash credits. We opted for Indian food, as it's one of the cuisines I don't make well on my own.
- Sunday - lemon chicken with orzo
- Monday - tacos (freezer)
- Tuesday - leftover lemon chicken
- Wednesday - orange chicken & rice (freezer)
- Thursday - the boys will have either pizza, or spaghetti & meatballs. I'll have a snacky meal ahead of my evening class
- Friday - baked fish

Ugh. I made chicken tika masala one night. Split pea soup with leftover Easter ham another. We ordered pizza one night, and a kid brought me home some Mexican food on his way home from work last night, since I had the house to myself for the late afternoon/evening, and he knew I was wiped out from other obligations , including getting DD from the airports previous night.
ReplyDeleteVague plans going forward are pulled pork sandwiches on homemade rolls (probably tonight) , burritos, fish and chips with mushy peas and a lasagna. I am doing none of it any too graciously. It’s that time of year when I would rather be working in my perennial beds!

I'll play it by ear, but shopped for the week with ease in mind, along with being able to make larger batches. I have everything for the lemon chicken orzo, except feta but maybe I'll just swap that out. I think that would be a nice change for my SIL.
ReplyDeleteI’m defrosting a turkey breast for a few days worth of meals. I made a bean salad to go with grilled chicken too. I’m wanting to clean out my freezer some since it’s the end of the month.
ReplyDeleteI had the Easter ham which seemed to last forever and put the bone with a couple of bits in the freezer for beans later. Used the last of coleslaw mix and made fried rice with ham in addition to sandwiches. I broke a tooth so soup and ice cream it is this following week since it is being extracted tomorrow morning!
