Happy Easter, for anyone celebrating. We will be having our traditional egg hunt, plus mimosas on the patio.
Here's what we're having for dinner this week:
- Friday - wings & pot stickers
- Saturday - one pan chicken teriyaki rice
- Sunday - kebabs & rice, plus cupcakes (Nick is having two bonus guests for dinner)
- Monday - leftover chicken teriyaki rice
- Tuesday - leftover kebabs & rice
- Wednesday - carnitas (in either tortillas, or over salads)
- Thursday - I have my class, so I'll have a snacky dinner, and everyone else will eat pizza
- Friday - TBD
What about you? What's on your menu this week?
Only thinking today. Since we'll have a big brunch , supper will just be picky bits. I'm trying to make food for extended family members too. I'll probably do a huge tortellini soup for here and there, plus another baked pasta dish.
ReplyDeleteHam dinner tonight. (Kid has to work so it will be a bit later.) Mimosas will figure in heavily. I made peanut butter eggs yesterday, and those, with a whipping cream pound cake will be dessert. Going forward will be a lot of easy meals…spaghetti with meatballs, burritos, salmon. Daughter returns Thursday night, and she’s a pescatarian, so things will get interesting over the summer. Poor thing dislikes vegetables as much as I do, so it’s a challenge. I am sure we will eat a lot of egg and pasta salad in the warmer weather. She and I also made an amazing vegetarian burrito over. We have also experimented with various fish recipes, with a sweet Thai sauce being a hit! I will also do smaller, meat free lasagnas for her when I make lasagna.
