Menu Plan Monday

This will be a very busy week, as we are having a virtual APAC "offsite". We were originally supposed to go to Tokyo, but travel restrictions made that impossible. Instead, we'll be home, but I'll be working late each day, in order to accommodate all of the Japan friendly meetings. 

  • Friday - finish off the leftovers in the fridge
  • Saturday - egg roll in a bowl 
  • Sunday - chicken yakisoba
  • Monday - grilled chicken salads (chicken from the freezer)
  • Tuesday - leftover egg roll in a bowl
  • Wednesday - leftover chicken yakisoba
  • Thursday - finish any remaining leftovers, or enchiladas (freezer)
  • Friday - wings & gyozas

  1. I made just a list, but want to plan better, maximizing what we have but really increase our vegetables and rely less in carb heavy meals.

    1. It's hard to plan economical, easy, & less carb heavy meals! Carbs make many meals "come together", if that makes sense.

  2. Still using up a few of the ready made meals in the freezer, so eating a bit heavier than usual for this time of year.... However it has been cold so hearty is quite alright.

  3. I’m using up what I have on hand this week chicken fajitas, salmon Pattie’s, things like that. I’ll need to do a grocery shop next week. Your menu sounds good to me. Best wishes for your meetings this week.
