Menu Plan Monday

With a busy schedule & lots of competing activities, having a meal plan is a gift I give myself right now. Here's what we have planned for the week ahead:

  • Friday - I kept things light with a few cheese & crackers, after a lunch out. M had a taco salad, and the kids had cheese pizza & salad.  
  • Saturday - Egg roll in a bowl
  • Sunday -  Tacos el pastor (new recipe, in the crockpot)
  • Monday - salsa chicken (freezer) over rice or cauliflower rice
  • Tuesday - leftover tacos
  • Wednesday - Mississippi Pot Roast (new recipe, in the crockpot)
  • Thursday - leftover egg roll in a bowl 
  • Friday - leftover pot roast + cauliflower rice

  2. The tacos sound delicious. I can't think of a way to ketofy it so I am just going to bookmark the recipe and make it one non-keto day!
    I really do like the Mississippi pot roast, especially since it cooks itself!

  3. Thanks for the al pastor recipe - they're our favorite when we eat out and I'd love to be able to make them at home. The Mississippi pot roast is a favorite here as well. I'm able to get small roasts at Costco that work for Brett and me and provide two meals. Enjoy!

  4. I thought I had everything for egg roll in a bowl, but forgot to get sesame oil. Next time I’m out and about.

I would like to plan better but if I look closer we eat the same things regularly: pasta, fish with Potato and salad or vegetables, leftovers, one day it is pizza or the like ( since hubby is partner owner in our little pizzeria), beef stew or schnitzel with rice or pasta, chicken soup, potato soup, sweet crepes. These foods will appear at least once every two weeks. I also eat more fish, salads and bean and quinoa variations, my guys eat more meat and carbs.
