Monday (Tuesday) Menu Plan

My parents are in town for a few more days, and spending time with us before they head home. As a result, we are feeding 6-7. Our neighbor's power is out, so we've also been feeding her dinner. 

  • Friday - M & I were in Scottsdale, and went out for Mexican food, at the hotel we were staying at. We had fajitas. Yum.
  • Saturday - M & I were still in Scottsdale, and had steak. Yum.
  • Sunday - We were back home, & I made a fiesta chicken rice skillet, that we served with garden tomatoes, sour cream, chips & guacamole.
  • Monday - My dad made a delicious stuffed shells dinner, with Caesar salad & garlic bread
  • Tuesday - M is making rice, and we will serve that with the Korean beef dish I made & froze last week. We will be driving to multiple soccer practices
  • Wednesday - My dad is making one of Nick's favorites - homemade baked chicken tenders
  • Thursday - Everyone is flying out, and I'll be juggling various soccer practices, so leftovers
  • Friday - Nick & Sam both have activities, so likely frozen pizza & salad

  1. Enjoy your time with your family. I have recently made Penne a la Vodka (I used Barilla Gnochetti) for my uncle and he loved it. I am not sure if the Vodka has any actual contribution because I cannot really taste it in the sauce.

  4. Burritos at some point this week with leftover pork from Sunday. I wound up in Costco AGAIN yesterday, so we had the requisite rotisserie chicken (again), and I might make a chicken enchilada soup with leftovers--or chicken pot pie. (Last week's chicken got picked clean, so no leftovers.) I also splurged on lobster ravioli which will be a treat for DH and me this weekend when kids are off doing their own thing. I'm simply not feeling particularly motivated to meal plan this week.

    2. When my son and around, I didn't count on n rotisserie chicken leftover-picked clean with maybe enough for a hearty broth.

  8. I hope you have enjoyed the visit with your folks. You don't realize how precious the time is until there is no more time.
    I made butternut squash soup last night that was pretty darn good!

  9. Welcome back!

    We enjoyed fajitas this week, and a fabulous beef stew I've been working on perfecting. I've been determined to get a few go to recipes down pat so that I can make ahead and freeze but also gift to our food exchange friends who always drop by with a bit of extra when they have it.

    PiC made a special steak dinner with asparagus tonight which was a huge treat and we have two Ribeyes left for another occasion. Not particularly frugal but we bought the meat from Costco and cooked it ourselves so far less than a steakhouse would have cost.

    1. We love steak,and it's one of the universal foods we all enjoy. We are having it for Thanksgiving, as the boys aren't turkey fans. Your dinner sounds delicious!

      I'm trying beef stew this week for the first time ever. I have leftover pot roast in the freezer, so thought this was a good use it up option. I have a few recipes as you describe, they are quick & relatively easy, but I can also always count on them to turn out for sharing with others, guests, etc.
