Menu Plan Tuesday



We had a great weekend skiing, so now it's time to get back to the reality of life - menu planning, school, work..the usual! It's been two years since I've skied, so I'm guessing I'll be a little sore after all of the fun. The teens are now the ones pushing M to go down the hardest runs at the mountain. My, how things change. :-) 

  • Saturday - we picked up a Costco pizza on the drive, & had that with salad
  • Sunday - spaghetti & meatballs, with garlic bread & salad
  • Monday - we opted not to do lunch on the mountain, so we had a very late lunch out before heading home
  • Tuesday - I pulled out fesenjan from the freezer, and M will make rice. 
  • Wednesday - chicken & ravioli
  • Thursday - chicken tikka masala (freezer) with the rest of the rice
  • Friday - yakisoba, and some sort of protein
That's what's happening at our house. What about you? What are you making this week? This is a week where I'm grateful for our freezer meals!

  1. I hope you are not terribly sore after the ski trip. TheHub was a little taken aback the first time our sons became the athletic alphas. Of course it is the advantage of youth and daring!
    I bookmarked the recipe for fesenjan and plan on making it someday. It sounds delicious!

    1. I'm actually feeling pretty good, although my toes are bothering me. I tend to grip down too hard when making turns, which can result in toenail bruises. I can definitely feel that today! And yes, I think M was a little reminiscent of all the days he taught them to ski, now that the tables are turned.

      The dish is really delicious. Best with rice & topped with fresh pomegranate seeds!

  2. Easy meals-happy for my slow cooker and heat and eat stuff in the freezer. I'm looking forward to a big burrito bowl-big with lots of lettuce and black beans, but limiting meat and cheese. I'm trying to shift these pounds.

    1. A burrito bowl sounds great! I should institute something like that at our house. I think everyone would really enjoy it.

  4. I made hot ham and cheese sandwiches for lunch today and have pizza for movie night tonight. Other than that I’ve not planned anything else.

    1. Oooh, a hot ham & cheese sandwich sounds delicious. I may have to make that for lunch one day this week. We don't typically have sandwich bread, but I have some leftover from ski lunches.

  5. That sounds delicious! I made chicken salad with leftover chicken and onions, mustard greens soup ( sometimes I use collards or turnip greens,), baked potatoes, and carrots. Cindy in the South
