Menu Plan Monday

 This week will be a bit different than normal, as we are trialing a meal service box. Mostly, because I'm burned out from cooking & meal planning, it's a super busy week, and it was very cheap. ;-) I don't expect this to be a regular thing!

  • Friday - spaghetti & meatballs
  • Saturday - out (M with soccer players, at an away game, me with Nick on the way home from another away game)
  • Sunday - grilled chicken & rice
  • Monday - leftover chicken & rice
  • Tuesday - a variety of options from the meal service, so  likely sun dried tomato chicken or creamy parmesan chicken
  • Wednesday - a variety of options from the meal service, so  likely spicy poblano beef bowl, or jalapeno popper burger
  • Thursday - whichever meal service dinner is left over :-) 
  • Friday - at the airport? Heading out for our college tour

  2. I am trying to think of summer main dish salads.... Not really happening when we still have banks of snow.

    1. I could so use a homemade cobb or Caesar salad. Both sound amazing!

  3. We've been leaning hard on Costco's refrigerated pre-made meals for entrees these past couple of weeks and they're pretty tasty! Not the MOST cost effective but also less than take out by a wide margin so we're happy with the trade off. We've tried orange chicken, lemongrass chicken, pot roast, and bulgogi. They all go well with rice or potatoes which we can whip up on our own.

    1. I know we're in a phase, but it's super frustrating to not know who will be home for dinner. It's not through poor planning on the teens part (well, occasionally), but mostly because the weather has resulted in tennis practice changes, cancellation, match shifts, as well as soccer practice changes due to closed fields, etc. My husband was not a fan of the prepped food, but we have another week of it. DS17 & I were like, it's not my favorite I've ever had, but was easy, tasty & nutritious. So, fit the bill. We're doing another service in a couple of weeks, when we come back from Dubai. Our work offered a few super cheap options, and it's kind of fun to try them out, but we also go back to our staples eventually!

      That's cool that you are having success with Costco's prepped meals. I've liked the bulgogi. We buy orange chicken & veggie fried rice at TJs, and that's an other super easy option to have in the freezer.
