It's a long weekend - let's get a few things done

I love having that extra day. It spreads out the chores, and gives me a chance to fill the freezer, do a few more random tasks, and makes house cleaning seem less like a drag, as it's spread out across more days. :-)

I made my first roasted chicken yesterday (they were out of turkey breasts at the store) & it was delicious! They were on sale for $.88/lb at Safeway, so I may go get another one today & try it in the crockpot this time.

Here's a quick snapshot of what I got done yesterday.

  • Run 3 miles. I really, really need to do this. At this point, it's a mental block to start running again.
  • Make a menu
  • And, a corresponding shopping list
  • Clean the fridge & microwave
  • Find somewhere to store our patio furniture cushions, now that they are all laundered & ready to be put away for the season
  • Laundry + sheets
  • Clean the kitchen
  • Make 4 dozen muffins for the freezer
  • Go to Costco, the produce stand, & the grocery store
  • Drop off books at the library

You'll see that I put off the house cleaning. ;-) Here's what's on the list for today!

  • Clean the fridge & microwave
  • Clean the kitchen
  • Make 4 dozen muffins for the freezer (I made two dozen yesterday)
  • Drop off books at the library
  • Take the boys to futsal practice
  • Take Nick to his futsal game
  • Pick up another chicken at Safeway
  • Yoga
  • Work with M on the house projects list
  • If time, complete my Dream Bio (Frugalwoods) 
  • Make dinner (Fiesta Chicken)
  • Make crockpot chicken
  • And, a loaf of bread (time permitting - this may be pushing it)

  1. Pumpkin cream cheese muffins are a favorite, the recipe is on Allrecipes. My daughter loves double chocolate muffins, but, let's be honest, that's like eating cake. I really like a recipe called "pina colada" muffins, another recipe on Allrecipes.
    Have you really NEVER roasted a whole chicken before? I used to think it was daunting as well, particularly when Costco has perfectly delicious roast chickens at $4.99 each. But, years and years ago, a friend sent out a recipe for "Roast Sticky Rotisserie Style." Basically, you rub a chicken with herbs and spices, wrap it tightly in plastic wrap and chill for a minimum of 4 hours, then roast low and slow. (Yes, allrecipes again!) It's really much better than Costco chicken, and it makes the house smell wonderful! When chickens are $0.78/lb, it's much cheaper than Costco, too, so we stock the freezer. I've also prepared bacon wrapped roasted chicken, another family favorite.

  2. I'll be doing cleaning I didn't get done yesterday and cooking a birthday meal and baking a cake for my daughter. She's doing something with her friends next weekend, so today will be family.

  3. My favorite combo is cranberry orange, will have to try those muffins. Today I am making banana pinneapple, love that combo too :)

  4. DH makes all the muffins in our house. He makes a lot of apple ones because we never seem to eat a whole bag of apples before they start to go soft. I love cranberries though ... those sound yummy.

  5. I enjoy reading you updates and posts. You get much more accomplished daily than I do. I am claiming it is an age thing!

    I love cranberry/orange too, but am also partial to coffee/walnut

  6. I didn't get to my muffins on Friday, so need to today. I have bananas that need attention. I have a canned of cranberries and am wondering if there might be a cranberry orange recipe I could use up the can and make?
