Saturday happenings

 Our kitchen is mostly back in order, but we are still missing the cabinet faces, so haven't yet unpacked. However, we have the oven, fridge, dishwasher & sink back, & it's amazing! 

I went for a socially distanced five mile walk this morning with a friend I haven't seen for a while, and then got busy in the new kitchen. I made a batch of banana muffins & a large batch of pico de gallo. If we can successfully grow cilantro next year, we can make grow almost everything at the house. (Tomatoes, jalapenos, lime).

Other happenings today:

  • Laundry
  • Bathroom cleaning
  • Kitchen cleaning (there's dust/drywall debris) lurking in many places
  • List an item on eBay
  • Menu plan for the week
  • Costco
  • M & I are going to a restaurant with socially distanced outdoor seating tonight. We haven't been out since February, so this should be a huge treat!
  • Vacuum
  • Sheets

  1. All chores are done, so today we are playing. SUP yoga, the an SUP trip around our harbor, our adults pool this afternoon, picnic dinner back at harbor tonight.

    Last night I made beef and broccoli stir fry, Tonight I'm making a big Greek salad.

  2. So glad the kitchen is almost complete. It is kind of amazing how much joy a working sink can bring.
    Have a great date night. I am still not ready to do the restaurant thing, but soon it will be cool enough to go and eat outdoors. I can't wait. I miss the restaurant experience.

    1. It was an outdoor patio restaurant, where they had taken advantage of a hotel space & it was quite a gorgeous & creative venue. Very impressed. However, it was at least 2x as expensive as last time we went (a year or so ago), so we definitely "made up for lost time" on the dining out budget. :-(

  3. Yay for your kitchen being usable again! The last item I made was zucchini bread if you don't count the chicken nuggets and corn that I microwaved for the kids' dinner and DH and I are having date night. LOL

    1. Zucchini bread sounds great! I froze grated zucchini from the garden, so I could make some when the kitchen was up & running.

  4. Ice! lol I got ice cubes out and refilled the trays.That does not count? Okay, I cooked some bought meatballs in the oven.

  5. I made a large batch of individual meatloafs to freeze in anticipation of surgery in less than 3 weeks and will be house bound for a few weeks and also need quick food I can microwave since ambulation will be affected.

  6. The last thing I made in my kitchen? Hmmm...well, it seems as if my kitchen gets non-stop use, but if I *had* to say, it would be either a slow cooked pot roast, or 5 1/2 quarts of home canned applesauce. (I did both at the same time.)

  7. Today and yesterday I spent getting little odds and ends done to help my daughter out. She got called to com e in early for her last shift at the restaurant, but today is actually not working any job. She literally has had 2 days off since May 28th between her two jobs, and several days worked at both. While not big salaries, she spent very little as well, so banked almost all of her earnings. I'm proud of her and felt she earned today as a break to see her friends, safely, before we move her back to school tomorrow. I'm so glad for you that your kitchen is on the home stretch. What a great thing to say your recipe came completely from your own garden. Since I don't like cilantro, it is already there for me!

    1. Pico de gallo is our favorite "add something to a dish to give it extra zest". It's surprisingly flexible.

  8. Oh, that is great about your kitchen. I know you're thrilled to be back in there. That is so neat that you'll be able to grow all your own pico de gallo vegetables next year. It is so good and refreshing.
